    I kept saying in the video medium well but it actually came out medium rare so adjust your temp accordingly. There is a link in the description above for a chart that has recommended times and temps for steaks. I actually should have let the steak stay in the water bath another 30 minutes or so. Remember you're not going to overcook the steak even if you left it in the machine all day. However, the texture will change.

      @@24yrukdesigner it's Sous Vide - cooking in a bag in water. He's not using the pressure cooker function.

    Jaxx, you should pat dry your steak before you sear them. You will get better crust

      Great tip, definitely do this. Especially to avoid splattering on a 600+ degree skillet.

    good news for people with non ultra versions of the Instant pot. I put my duo 60 on keep warm lowest setting and that's holding steady at 138ish (no digital thermometer) . Sous viding some bacon in it right now. Sure id rather have the control of the ultra, but that's not what i have currently. will be interested to see what med and high keep warm temps are on the instant pot and my digital crock pot as well.

    i attempted it in the Cheaper model Duo Lx and it came out perfect. I alternated between the "slow cook" mode and the "keep warm" for about 1 hr and 45 minutes. It came out amazing!

    I cooked a steak in my pressure cooker and seared it first in butter then cooked it 3 mins on high and it came out medium. Perfect. I didn't put in a bag.

      I'm pretty sure you don't get the point of sous vide steak. This French cooking method maintains an even temp so the inner layers of the steak are the same temp. You'll have a medium steak throughout. Not a medium in the middle and thicker parts and well done on the inner edges steak. I'm sure the steak is still tasty though, but we're talking about perfection.

    Just bought the new instant pot dual plus with the sous vide feature. Kind of cool they actually have a setting for it. Got it off QVC and looking forward to getting it. It was their special for the day and it sold with a glass lid and a extra seal for $79.85 what a bargain. The sale was over and it is now $139.00 sheesh! thank you for your video

    More IPs with sous vide now:
    Duo Evo Plus; Dou SV 6qt at Costco; the black Viva 6qt at Walmart and the web site shows a black Viva 8qt; the special Duo Plus 6qt that only QVC has at the moment. The old Smart Bluetooth can also sous vide because it allows the user to set a specific temperature.
    eta: As of early November 2019, IP has updated both the Duo Plus and the Viva to have sous vide. New descriptions and manuals are posted on their web site. Just beware of old non-sv versions selling through, possibly as Black Friday or Cyber Week specials.

      Oh man the pressure cooker is where it's at. I do prefer my Cuisinart over the Instant pot but that's just me. I rather just use my Cuisinart and buy a Sous Vide machine but for now it'll have to do. Thanks for watching my brother.

    got the power quick pot for 60 bucks Its actually amazing and also comes with sous vide. I was going to pay more just to buy the sous vide by itself because i was so curious but i got the whole works on sale for half what i would pay for the sous vide by itself. It should still be on sale at sams club. I havent had a lot of use but I am really impressed and its stainless steel which matches my all stainless steel kitchen perfectly

      Was in the same boat. Bought the power airfryer, (this is my 3rd airfryer, loved all of them) I got the power quick pot as a bonus, didn't realize it had the sous vide function . My older insta pot didn't have sous vide. Can't wait to try it.

      The Power Quick Pot is awesome. I've had mine for over a year now. Mine heats up to temp super fast and gets fully pressurized in around 5 minutes. I'm surprised it's not talked about a lot more.

      @@jamesamber7568 ya I've had mine for 2 years and use it all the time. Very incredible so easy to clean. Can cook everything in one pot usually. I think it's probably made by the same ppl as instant pot because the all the beeps sound exactly the same. Ya this appliance really is a must have in the kitchen.

    You can do this with any instant pot. Just use the keep warm setting. It maintains a constant 130 degrees in normal mode.

      If that was true you would only get one temperature steak. Which would be close to medium rare. What if you want rare or medium or well? Regardless, the keep warm temperature operates at 145 ~ 172°F according to Instant Pot’s site.

      If you're eating a steak anything other than rare/medium rare you shouldnt be eating steak

      @@NytronX it doesn't work that way with sous vide steak. You can't sear it too long or you'll start messing with the consistency of the perfect temp throughout the steak.

      @@fylbrom haha, I used to think that way too, but then I had to adapt to my spouse's family's cooking and learned to enjoy it all. Heck, I even eat steak completely raw sometimes. Steak is always a treat.

    I have the Instant Pot Smart and I can sous vide in it. I think they are the only 2 that you can actually set the temp. Best steaks I have ever had! :)

      Really, I've never heard of the "smart"... Does it have the function for Sous Vide or do you just set the time and temp?

      Jaxx Drinkwater set the time and temp just like the ultra. I’ve not seen the ultra except in your video, so I don’t know all that much about it. The Smart has Bluetooth capability, and I was able to write a program and store it in the app that I run every time I make a steak in it. :)

      Actually that will not work. The whole point of sous vide it to bring it to the correct internal temperature (and hold it if desired) and then caramelize the outside for looks and taste. If you sous vide it at home, let it cool and then reheat it will be overcooked. Sorry.

    I just purchased the Ultra IP, and as i was setting the time, then temp, it automatically switched the time to 4 hours after setting temp to 150F, even after I set the time to 2:30 hrs first. Ugh. I ended up letting it go...it's cooking now, we shall see how it turns out. So - it forced me to do 4hrs at a temp of 150 F. ?? It's frustrating that Instant Pot doesn't put a manual in the box that explains how to use all the features. Thank you for your video...hope our steaks turns out good. My husband and daughter are the steak eaters in our home and they prefer medium well.

      After you set the temp, go back up to time and reset to what you want. It should work fine as I noticed the same with it resetting to 4 hours.

    Trying this today for the first time off your instructions. Just to clarify, I wait until the Insta pot screen indicates that the water is it temperature and the lid is not on the pot during the cooking process, correct?

      I'd put a glass lid or a dinner plate or something else that's a poor heat conductor on it. That's to avoid evaporation loss of water, and to not work the heating element as hard. The longer the cook, the more of an issue heat loss and water loss are. Any glass lid that fits. Lots of glass lids in thrift stores for $1 or less if your cookware doesn't have one that fits your IP, anyone reading this comment. You can even find them with a little vent hole like the IP lid has. Or pick one that's a looser fit and just slide it off or one side so it can leak ever so slightly.

    Stupid question but is it imperative to close the lid of the instant pot to use this? I have the Duo SV model and the instructions booklet calls for sealing off the lid. But is this absolutely necessary if i would like to leave it off and be able to monitor the cooking process without the lid on? isn't the instant pot just acting as a water heating element in that setting?

    Hi loved this. i have the Ultra and will try tonight. do you do this often. running it for 2 hours does it use a lot of electricity. Can we also cover the lip and it should consume less i think, but would that work

      Yes, I use the function often. I also have the Mixtomax sous vide cooker, which I use as well . Here it is in action doing pork chops. goo.gl/axMywy . I have not noticed much electric being used and yes I think if you covered it would be more energy efficient

    I tried using the Ultra and found that I had place the 1.5" thick steak in the IP @133F for 1.5 hrs and it turned out Med, and strange that the top half was more red and the bottom half near the element was darker, might want to flip the steak half way through. I got an Anova immersion circulator though since it can use a larger pot for more to cook.

      I love my Anova. Perhaps because the ultra doesn't circulate the water is the reason why the cooking was inconsistent. I love my instant pot and my Anova.

      It was not an option when this video was made, but you are correct. I typically use my sous vide stick just because you can sous vide something big and good - like a brisket. Thanks for watching Julian!

    What ? You are medium well kind of guy ? I was going to say that your steak looked more like medium rare which is steak for my liking. I don't think I would have patience to wait for 2 hours though specially when you still will have to dirty a skillet to sear it in the end. It did look mighty fine and I was trying to eat it with my peepers ! Thanks and have a great week ahead Jaxx. Are you going to do the hot pepper challenge that Armadillo Pepper challenged you ?

      Hey Paivi, I may try to put together something. I've done the whole ALS thing before, that and it will be hard to beat some of those peppers. The only thing I can get right now is Jalapenos and Habaneros. All my hatch chilis right now are roasted so even doing them would be kinda lame.

    Some of the instant pots have sous vide as a setting, but just so I understand, the Ultra doesn’t have the setting but you can still use it for a sous vide method; is that correct?

    Great Recipe !
    I like that Hawaiian salt
    But not on Eggs or other light coloured food.
    It does Not bother me
    But guests might be concerned.
    I like that ultra pot !

      Yea the Instant pot is good. A lot of poeple love it. I prefer my Cuisinart over the Instant pot but that's just me.

    Do I have to vacuum seal the plastic bag? Can I just use a ziploc freezer back? I just got an Insta Pot Ultra and I'm dying to try this right now.

      Yes, you can use a zip lock. Try to squeeze as much air out as possible to keep in from floating up.

    I’m guessing the lack of circulation and inaccurate temperatures (sensor is not in the water) is reason 149f got you medium rare

    Dunno what is happening, I sous vide at 140, 138, 136 and everytime after sear, it's well done. The only way I get medium is if I put it to rest in a water bath with a couple cubes of ice before searing it.

      You need to sear at a hotter temperature for a shorter period of time. Should only be searing for a few moments on each side. You can sear under the broiler, in a hot pan with oil, in a deep fryer, with a blow torch... Just be sure you're only searing long enough to get the outside crispy not the inside overcooked.

      I do believe for the Ultra sous vide settings it can be from low to high between 104-208 F.

    I have the Ultra and want to try sous vide but when I look at the time charts, there's a huge difference between 1 and say 6 hours or 24 hours.

      Look at the chart and decide how you want your meat texture to be. You're not going to turn out a bad steak either way, but the texture and juiciness with change the longer you cook it. Experiment and find what you like. I wouldn't really go over 3 hours, but anywhere in the 1-3 hour range and you're golden. If you're asking me, stick to dead in the middle and see what you think about 2 hours.

      It's just perfect on your Duo Crisp. When this video was made the Ultra and the Smart were the only ones with sous vide capability. The duo should do great for you!

    You can use a regular instant pot using the ''keep warm'' mode. I have done a steak for 1.5 hours on 'keep warm' and it came out a perfect medium.

      You need set the temp. for cooking. and not keep warm.

      @@JBCool0729 Right. The keep warm function will keep anywhere from 145 ~ 172°F. That will give you anywhere from a medium rare to a well done steak, depending on your device.

    How many steaks can you sous vide in the instant pot at a time?

      Not sure, I guess depends on the steak size, but probably not too many. I've only done 3 at once and they were not BIG. If you're looking to do this in a batch or for, let's say 5+ people at a time, I would get a sous vide stick. Plus, with a sous vide stick you can do things like brisket and pork belly!

    Man, I have been wanting to get a Sou Vide cooker but this makes the Insta Pot that much more valuable. Im just curious as to what would happen if you added the pressure? Great recipe and love the goat cheese on top at the end!

      If you watched the video, notice that I'm using the Instant Pot to sous vide the steak. Sous vide is cooking things very low and slow. Also, Instant Pot is a brand name, it is not indicative of whether it cooks food "instantly". Have a great new year Alexandros!

    You do know that's not a medium well steak, right? Medium well is slight pink. Yours is more medium to medium rare.

      Yes, I do know, but just so you know, medium nor medium well for that matter or any steak doneness, is not determined by the color of the steak; it's determined by temperature. I could have a medium well steak that looks medium by simply letting it rest and the hemoglobin will make that steak way more red/pink that what you would think medium would be.       Totally not necessary. Just personal preference really. You will certainly save a small amount of liquid. You will lose heat but the machine always keeps it at the same temp so it won't matter. I personally like to keep an eye on things inside, just to make sure nothing floats to the surface.

      You can actually see it didn't burn. This wasn't a dupe steak that I said I seared in butter but behind the scenes I had another one searing in oil and did the old switcheroo and just said I seared in butter when I really seared it in oil. I seared it in butter. It didn't burn. You want to sear it in oil, you do you and sear in oil.

    Sorry, I was just born yesterday....but what on earth is "sous vide"? I wikipedia'd it...and it says its cooking in plastic sealed bag but with longer cooking time? How is that a good thing? Oh, then I see that once it's out of the pot....the steak is then seared/cooked in a frying pan?? 🤔 Oh wait! (Does this technique make it more tender or something? seriously...I don't know.

      Yes, it makes it more tender. It's longer time with lower temps. It allows the food to cook at the exact temperature you want it, through and through, without losing any of it's own juices.
