- Gambas al Ajillo is a Spanish dish enjoyed as part of a tapas menu. Gambas means shrimp, and Ajillo means garlic. It is called gambas, or shrimp gambas.
It is a simple dish that involves sautéing olive oil, garlic and shrimp in a cazuela which is called small cast iron pot and sprinkling peppercorns and herbs for flavor. Today, I cleaned the raw shrimp myself, stir-fried eggplant and salty olives to adjust the seasoning, and upgraded it by adding rosemary flavor.

[Cooking Ingredients] for 2 servings
◆ 10 shrimp, 200g
10 garlic cloves
100ml olive oil
a little salt
A little bit of ground pepper
1/2 eggplant
5 pepperoncino
5 olives
1 tablespoon olive oil
A little parsley powder
1 sprig of rosemary leaves
◆ Baguette
◆ How to prepare shrimp
1 cup salt water
a little bit of salt and pepper
1 tablespoon lemon juice
※ You can add mushrooms and cherry tomatoes as vegetables.
※ Peperoncino is dried Italian hot pepper and can be replaced with hot pepper.
※ You can choose herbs according to your taste, such as basil or oregano.

Low Cooking Difficulty/Cooking time: 20 minutes
1 Shrimp preparation: Season for 10 minutes
2 Prepare ingredients: sliced garlic, eggplant, olives, rosemary
3 Stir-fry olive oil
Low heat for 1 minute: Garlic
Cook over medium heat for 3 minutes: eggplant, peperoncino
Medium heat 3 minutes: shrimp
Low heat: olives, salt, pepper
4 Plating
Parsley powder, rosemary
5 Enjoy Gambas al Ajillo with baguette!
