He did not write the song, at least not entirely. He enhanced it and produced it and this is the guiding vocal version, common during the recording process. Ringo is playing drums and can not sing.
There is a great youtube clip of George and Ringo on an English talk show and Ringo jokes saying that every time he collaborated with George he wanted to include Hare Krishna -- I thought Ringo was exaggerating but here it is -- in this song -- that was taken out for the final commercial cut - right? It was no joke but I am laughing because Ringo really got George - Ringo really rolled with it and could make light of it and on that interview George is laughing too. -- It is heartwarming to feel the love all of them had for each other - regardless of all the fighting.
A lot of his songs from ATMP were written long before he made the albums. It seems the Beatles could have capitalized more on his great talent. All Things Must Pass is my keeper album of all.

I love George but Ringo's version is more powerful. George was wise to give it to Ringo. Love them both.. no I love the four Beatles forever and a day 🙏 Love them ❤

The claim at the head of this clip is incorrect I'm afraid. Ringo wrote the basis of this song on 1968, then called "You Gotta Pay Your Dues". George came along in 1970 and helped Ringo to tidy it up a bit and finish it, working up lyrics for the last verse (which as this version shows were changed still further) and providing crucial arrangement ideas such as the classic guitar figure. Whether this might have entitled him to a co-writing credit (as with "Photograph") is of course up for debate - I would accept that it should - but the two friends didn't go there and I respect their decision. In any case, the genesis of this song definitely lies with Ringo, not dear George. Ringo and George made three separate versions of "It Don't Come Easy" in various sessions across 1970, with Klaus Voorman, Stephen Stills and (latterly) Mal Evans and Pete Ham & Tom Evans of Badfinger (on tambourine and backing vocals respectively). The version provided here is a "work in progress" version where George sang a guide vocal while Ringo was drumming. There are similar bootlegs of John doing this when he produced other Ringo songs.

I know George gave this song to Ringo but why didn't he record it for himself as well - good song it wouldn't have been out of place on the atmp album
George didn't record songs that other Beatles wrote. That would include songs Ringo "wrote". He only recorded his own work.
