many old-time fiddle songs are played on different tunings. It's easier to play the song that way and it makes the fiddle resonate in the chord of the song
Excellent fiddlers have played 'Old Masters" instruments, and remarked that they have outstanding musical potential, but are not "forgiving". A person must be an accomplished musician to make these instrument sound great. Violins, like other stringed instruments, sound best when played often. Museums pay professional fidders to periodicalt play their instruments. Creating undesired sound on a fiddle/violin is not difficult.
