Being from Santa Maria, Ca where this type of grill is famous, I was disappointed you didn't cook our world famous Tri-tip! Traditional SM BBQ we don't use briquettes, its straight Red oak and those flames lick the protein! Great video loving the content!

Great video. I am building a Santa María right now. Will be a smoker too. Question... the frío grates are not painted correct? I’m in Venezuela and there’s no way to find high temp paint but I don’t really like the idea of eating off a super hot painted surface anyway.

Up here in "God's country "? Ricer when did you move out here to "The Great Pacific Northwest"? Oh,you meant Wisconsin didn't you. That's what happens when you go outside in the coldest winter parts without your cheese hat on.😄☃️ ( sorry, couldn't help myself) Anyways, glad to see the new Santa Maria and I'm really looking forward to seeing many cooks on it. And as far as how they put together the crate at Lonestargrillz, speaking as a professional truck driver i say they do a fantastic job of putting it together. Rather it be overbuilt then under built and busted up. ( it would be nice if the outer pieces of plywood were screwed on instead of air nailed but what the hell. ) The amount of options when ordering this grill can be a bit much, soooo many choices. Anyway, great video. Really I think the only option they don't offer yet is a mountable beer cooler and beer can holder. One can always dream though. Sir, have a great day.😃👍🔥🍻🌤

It would be really cool to see a side by side grilling experiment, V grate vs regular grate look and taste test!
When it warms up I might do that in a video. To me the V grates are good if you want to use the juice for basting. Thanks for watching!!!
How did you control the smoke running that grill inside? Do you have a vent hood or vent fan that sucks the smoke out?

Why carbon steel and not go stainless grill grates? is it worth going stainless?
