It's time for episode 11 of my winter series, this final one is focussing on wonderful leeks.
I've taken inspiration from the famous miso onion recipe by Yotam Ottolenghi and Ixta Belfrage except I'm using leeks for a different texture and milder flavour and turned them into a nutritious pasta sauce with some extra cannellini beans for protein.

Ingredients: (serves 2)
4 leeks
1 veg stock cube
2 tsp miso paste
600mL boiling water
30g salted butter
15g parsley
1 lemon, juiced
20g grana padano, grated
