You seriously overestimate Luke's dueling. BOBF Luke was not the one who was capable of just spamming force speed to the point where it seemed like several lightsabers were fighting at the same time. He also had only like 7 years of saber training, 3 years of which was just memorizing Vader's moves.
Luke as BOBF is already above Sidious. Snoke is stated to be on the level of ROTJ Palps and Luke bested him. The whole point of Palps reveal in ROS was that he waited until Luke was dead because he was afraid of him.
