Made this. Absolutely delicious, rich taste which belies the light colour. Golden syrup is quite unknown over here, so a few of my friends and family are very happy to have learned about such a tasty, easy to make condiment. I suppose I should pass some those thanks along to you 😄
I've always been curious how close golden syrup is to honey in chemical terms. A lot of fake honey is just flavoured golden syrup, same with fake maple syrup.
In terms of the main sugars they are similar. They are both a mix of fructose and glucose, it’s the fructose content that makes them sweeter than normal white sugar which is sucrose. Sucrose chemically breaks down into fructose and glucose, that’s the process that you are undertaking. There’s a whole mix of other organic compounds in honey given it’s natural origins, that you don’t find at all in golden syrup.
I thought it was going to be an amazing slice of candied lemon but I was a bit disappointed to be honest. This is great with crepes though. Managed to get my hands on some maple extract and did a batch with that. Heaven 😋
You can eat the lemon, but you'll be disappointed. It's not like lovely candied fruit, but just a slice of lemon boiled in sugar. In the same way, I was disappointed by pickled eggs, although I don't know why I expected them to taste of more than just a vinegar flavoured boiled egg.

Sounds delicious but my pancakes weakness is lemon and sugar, so disappointed or not I would have still eaten that lemon 😆
