    Potato Gnocchi
    Serves: 1
    Prep Time: 20 Minutes
    Cook Time: 2 Minutes
    Ready In: 22 Minutes
    Ingredients:
    1/2 pound Russet potatoes
    1/2 cup "00" flour
    1 Tbsp Extra Virgin Olive Oil
    1/4 Egg
    Directions:
    1. Peel and dice the potatoes. Boil for about 15-20 minutes until tender.
    2. Remove potatoes from the pot with a slotted spoon and drain off as much water as possible. Put the potatoes through a potato ricer. If you don't have a potato ricer, you can mash the potatoes by hand and fluff them up a bit with a fork.
    3. Combine all the ingredients in a bowl.
    4. Depending on how much moisture was in your potatoes, you may need to add up to a 1/2 cup of flour. But be sure to not add too much flour, otherwise your gnocchi will get hard.
    5. Prepare a clean work area and lightly dust it with flour. Take the dough, a piece at a time, and roll it out gently with your hands until you have rolls about 1/2 inch in diameter.
    6. Using a knife or a pastry cutter, cut the tubes of dough into pieces about 1/4 inch long. You can leave the pieces as they are, or you can roll them over a fork to create ridges. Place the finished gnocchi on a baking pan dusted with flour, and sprinkle a little flour over top.
    7. Cook gnocchi in salted, gently boiling water until they float to the top, about 3 minutes (depending on their size). Gently remove them with a slotted spoon, and drain well. Serve them with your favorite sauce.
