How to Make the Juiciest Roast Turkey Breast

    INGREDIENTS:
    For Turkey
    🔹 2.5 lbs bone-in turkey breast half (so 1/2 of a whole breast)
    🔹 Kosher salt this is the one I use
    🔹 1 tsp ground allspice
    🔹 1 tsp paprika
    🔹 1 tsp ground black pepper
    🔹 ½ tsp nutmeg
    🔹 1 head garlic about 14 cloves, peeled and minced
    🔹 Large handful of chopped fresh parsley about 2 ounces
    🔹 Extra virgin olive oil
    🔹 7 to 8 small shallots peeled and halved
    🔹 7 celery sticks cut into large pieces
    For Grapes
    🔹 1 lb seedless red grapes
    🔹 Extra virgin olive oil
    🔹 Kosher salt
    NOTES
    🔹 Make sure your turkey thawed before cooking. It will typically take 1 day or so to thaw out in the fridge.
    🔹 Salt the Turkey Breast First. Do not skip salting the turkey. If you have the time, salt and refrigerate the turkey uncovered for 2 hours or even overnight. But if you're short on time, salt and leave it at room temprature for 30 minutes while you work on other things. I use low-sodium kosher salt which will do its work of tenderizing and flavoring the turkey. And if you do end up chilling it uncovered, the circulating air will dry up the skin some which will help it cook to a cripsy golden brown while the tukey breast stays nice and juicey.
    🔹Let the cooked turkey breast rest before serving. When you take it out of the oven, it's a good idea to cover the turkey loosley with some foil and leave it undisturbed for 15 minutes or so. This allows the juices to redistribute (you don't see this part in the video, but I always do it).
    🔹 The roasted grapes are optional. If you skip the grapes, still, heat the oven to 450 degrees F to start with and reduce the heat to 350 degrees F when you insert the turkey in the oven.
    🔹 Storing leftovers. If you've roasted turkey breast to use for sandwiches for example, or if you have leftovers, you can refrigerate for later use. Store roast turkey breast in tight-lid glass containers and refrigerate for up to 4 days.

    I am part of a group of women who have been meeting once a month since 2000. We rotate picking a restaurant for dining however since COVID we now meet at each other’s home doing takeout. Since it was my month and the month of Thanksgiving I choose to dine in and cook the meal, This roasted turkey was a hit, I also chose your orzo salad as a side dish. The girls loved it so much that it will now become a tradition at my home every Thanksgiving. Thank you for sharing such a wonderful meal, simple and delicious!

      This looks incredible. It made me so hungry at 9am that I,not much of a cook will defrost the turkey breast and do this. Maybe Ibetter find some grapes first 😊.

    Made this amazing turkey dish! I didn't have grapes so I used raisins in the base and a quarter cup of chicken broth and a drizzle of olive oil so nothing burnt. I liked the sweetness that the raisins lent to the dish. Yummy!❤

    So I made this... thought it wouldn’t taste good cus it had no sage nor most of the regular turkey seasonings, boy was I wrong! This recipe is a keeper. My husband who doesn’t like turkey, loved it. My son ate left overs for 2 days. Best recipe for turkey ever! Thank you for sharing this with us 💚

    Nice recipe, i never seasoned turkey with this set, definitively will try. Sweet grapes? Good idea as well! And the meet on the vegetables is must go allways. Nicely done, well filmed and put together.

    Thank you for mixing the dry spices together BEFORE they go on the turkey breast. It drives me nuts when I see someone sprinkle each spice separately on the meat, only to rub everything together. Just mix the spices first.
