I like the bean sprout and veggies less cooked so there's crunch or crisper. I like the sauce combo you used, it looks very good. This is one of my all time favorite dishes, when done right, it's a pleasure to eat.

The exact origins of chop suey are heavily disputed - but it's almost certainly a variation on a Taishan dish that took off in America.
The Immigration and Nationality Act of 1965 resulted in a much higher number of trained chefs entering American-Chinese restaurants - and they brought their training and recipes with them, which led to the decline in popularity of this dish.

Another informative video especially for home cooks who enjoy stir fry. Do you use premade minced ginger and garlic or do you prep that yourself and store? Thanks again

I make my own ginger garlic paste. It’s about 1 garlic head to one medium knob of ginger. I made a tub of it the other day (4 garlic heads to about 1/4 cup of ginger). I use less ginger because I like the garlic taste more. I add some salt about 1tsp to the whole mixture. It keeps in the fridge until I use it up.
