    I’m so happy to see you get so many beautiful fresh fruit and vegetables! So many delicious possibilities.
    Have you ever tried stuffed capsicums? I cut them in half lengthways, deseed them, blanch them in boiling water for about three minutes, then stuff them with cooked rice flavoured with whatever I have available: chopped onion, tomato, herbs, olives, sardines, sweet corn, cooked meat… Arrange the stuffed halves in a baking dish, top with some grated cheese and bake until heated through.

      Thanks Sherrie😊💕 Yes, free is my favourite price as well! Those capsicums are so nice. I believe much of the stuff was donated from a large supermarket and looks like they just cleared the shelves for new stock. Just about everything was in excellent condition, nothing wrong with it, like what you'd buy yourself. So awesome to get! I did end up making a pasta dish on the Saturday night using some zucchini, tomatoes, red peppers and fresh basil, funnily enough! It turned out really tasty!😋

    Whenever I see veggies, my mind turns to soup. Roasted pumpkin soup if you roast the pumpkin and have leftovers. My mum used to make curried zucchini soup. Her base was 1 onion, 1 carrot, 1 stalk of celery and 1 potato. Add zucchini, seasonings and curry powder to taste. She would blend it. You can add milk if you wish. It's great served cold in summer with a dollop of yogurt. Soup with crackers or toast is a go to meal for me. Cucumber and tomato salad with herbs from the garden...tasty!

    • @makingendsmeet
      @makingendsmeet  21 день назад +1

      That sounds delicious😋 Roasted pumpkin soup is such a comforting classic. Your mum’s curried zucchini soup recipe sounds fantastic too-perfect for using up veggies. I love the idea of adding yogurt for a refreshing touch, especially in summer. And cucumber and tomato salad with fresh herbs would make a perfect side dish. Thanks so much for sharing your tasty ideas!

    Hey. Save about 10 of those pumpkin seeds for your garden in a month or two. And then roast the rest with some oil and salt. Hopefully when you plant them you’ll have huge pumpkins in some months.

    • @makingendsmeet
      @makingendsmeet  22 дня назад +3

      Hey Christine😊💕 We think much the same lol! I actually planted some of seeds from the pumpkin already! It was a different, longer variety that I've not seen before, will be fun if I can grow some. And love roasted pumpkin seeds too😋

    • @Gardeningchristine
      @Gardeningchristine 22 дня назад +3

      @@makingendsmeet Excellent! If you still have any of the seeds I’d plant some more in a couple months. We’ve got squash vine borer and squash bugs that can kill a plant in days. Plus powdery mildew and other pests. I’m on my second round and I’ve got my fingers crossed that I can get at least one per plant. I got half of an unripe spaghetti squash so far this year. Luckily other things have been doing better!

    • @makingendsmeet

    I do the same thing with peppers. We have an app called flash food in my area where the stores put up boxes of fruit and veg for $5. I pick those up when I see one with things we will eat, and eat those throughout the week and freeze or can what I can as well for later.

    • @makingendsmeet
      @makingendsmeet  21 день назад

      Yes, I only started freezing peppers recently - it's so handy! And so quick and easy to wash and chop them up then put them in a zip-lock bag in the freezer... and so very nice then to have them conveniently ready to use whenever you need them!
      That sounds like some good deals with Flash Food. That would save you lots!

    I would add the red peppers to a Spanish rice made with tomatoes, pieces of onion and add some red pepper. You can add hamburg meat or sausage meat.
    I would then spoon the mixture on the Lebanese flat bread and sprinkle it with cheese.

    Hi Mem, just curious haw you balance meals with such a heavy bread load. I tend to find my 4 kid's and partner get over bread and carbs very quickly and I always have to have an awful lot of fresh fruit and veg to overcome that. My youngest will eat 3 bananas a day if allowed. Do you have to supplement from the grocery store too? I just can't fathom how you would do it all from foodbanks

    • @welcometomysecret6423
      @welcometomysecret6423 20 дней назад +2

      I think everyone that goes to a food bank needs to shop as well so they can have a healthy diet so much bread say for breakfast lunch and snack is way to much and you would be so bloated

    • @makingendsmeet
      @makingendsmeet  18 дней назад

      Hey Ali😊💕 We just make do the best we can at the moment. Our diets aren't perfect but we eat better and have more healthy options using the food banks than we did before I discovered help was available and was doing without. Most of the food we eat, roughly 80-90% I'd say would be from food banks currently, so it's a huge help. After we've paid for our living costs and bills, our food budget is very limited these days.
      In order to get enough to feed everyone and have a bit of variety (and more balance with fruit and veggies) I usually go to more than one food bank/pantry nearby each week. My garden is a great help as well with fresh herbs, greens (like silverbeet and kale) and cherry tomatoes currently. I also barter and swap produce with family, neighbours and gardening friends in my area regularly.
      Even after that I do find that we still have to get a few things from the supermarket when we can afford to, on a weekly or fortnightly basis... mainly things like butter, cheese, eggs or some extra milk to fill in the gaps. Sometimes I pick up some cheap fruit from the green grocer and my husband will buy meat from a local butcher in bulk too.
      We don't have bread every meal, keep in mind the packs of bread I get in the hauls are most times shared amongst the four of us, usually over the course of a week... so we might have fruit and cereal or porridge for breakfast, a sandwich for lunch with fresh fruit/salad, maybe some other baked item/cracker with toppings like avocado or more fruit or a smoothie for a snack... dinner is varied with usually vegetables with some type of budget friendly protein (beans/lentils/eggs/tuna/chicken/meat) sometimes with rice/pasta maybe bread if it's a burger or bread on the side it just depends. Having yummy spreads to go on the bread makes all the difference I've found too😊
