I like this. He doesn't just say 'do this then do this then do this', he tells you WHY you're doing it, and underlying principles which you can apply to mutliple situations. I'm going to buy this dvd.

To complete the pass, he must let go of the knee (i.e.: pass). If you can keep his head on the side, you have enough space to get back in the guard when he tries to complete the guard pass. However, I have to point out that you shouldn't let him pin your knee in the first place. If you can't prevent him from doing that, then perhaps he is just better than you.
You already did. The technique you are criticizing is from Demian Maia. "What if he pins your knees?" "40lbs heavier?" Tell that to Frank Mir: Maia is 170lb. Frank is 250lb. If it was that easy to beat Maia's technique, I doubt Franki Mir would have said: "If Demian Maia wanted to have sex with me i don't think i could stop him". That guard recovery technique is solid, it works. Just drill it and learn how to make it work for you.
If you just started i wouldn't recommend the submissions 101 videos because some of Ari's techniques are technically wrong and you can pick up bad habits. Of course there can be some decent stuff on there as well but in a lot of his video's he often makes mistakes with movement etc.
Don't know that this is that good a technique. What if your opponent is smarter than the guy in blue and pins your knee to the mat and outweighs you by 40 lbs? I don't know many who would not pin your knee to the mat. You're pretty much stuck and the technique becomes useless.

The destroying the head position stuff is awesome, makes sure a difference when trying to stop the pass
