It depends on the color ingredient. Something like harissa would be quite strong, but turmeric or parsley has hardly any flavor, especially once the pasta is sauced. You can add more or less color ingredient, depending if you want to taste it.
I find that I have to add a TON of it to soups and things to detect much flavor, and it virtually disappears in pasta. Love it because you still get the health benefit but no overbearing flavor.

Regarding the balloons: latex is a not uncommon allergy, so it’d be a good idea to check with your diners before using them. You might be able to use non-latex medical gloves, but those will be a bit more expensive-and, you know, hand-shaped. ;)
I would dearly love to see the balloon pasta after baking….caved in? Dried out and inedible! You need to cover the baking dish right, so the pasta doesn’t get rock hard like lasagne that is not completely covered? Many questions…has anyone tried this?

not necessarily! there is also purple dragon fruit which has purple flesh inside the fruit - i live in hong kong and we can get it pretty readily here

It would be the same as the food prepper wearing latex gloves. Most restaurant kitchens aren't allergy free.
