I would like to ask why fresh pasta from beet discolored when i cooked it? I boil beet..then puree and after i used puree into past dough (sorry for my English)
Don't boil the beet ahead of time. Use it raw if you have a strong blender, or roast it if not. That will help a lot!

Can you share your basic pasta recipe? When i make pasta I always use egg, but you probably don't because you color it.
