Except he doesn't remember other timelines. He can observe changes in your behavior (facial expressions), but he doesn't just remember every timeline ever. If he could, he wouldn't need reports on timelines, a lab for studying timelines, or a picture reminding himself not to forget (since, according to you he remembers). Basically, sans doesn't know anything beyond the timeline your currently in.

My theory/ something I found:
Sans actually cares about you/Frisk, even in the genocide run.
He says he doesn't care about getting to the surface, and also says 'seeing what comes next, I can't afford not to care anymore'.
He knows that if you kill him, Chara will take your soul.
Even after everything you've done to everyone,
You killed his friend at the door, who only tried to protect you.
You killed his brother, who was the happiest and most innocent guy ever, who believed in you until the end.
You killed Undyne, the hero that is 'Undying'.
Even Mettaton, who had hope that he could defeat you.
You killed everyone he's ever known.
But deep down, despite most of the things he says, he still cares for you.
*Sans doesn't want your soul to be taken*
In effect he's staying true to toriel. he's protecting you from having your soul taken.
My theory is simple,
Spoiler Alert
When you start genocide, in snowdin, Sans tells you'll get a bad time, when he says that, he's actually talking about the moment Chara takes your soul, and not about his fight,
When he says "If we're really friends, you won't come back", he just wants you to be safe
When he's about to die, he says "just, don't say I didn't warn ya", that means the "danger" is still there, even after his fight. The danger isn't him, it's Chara
