Once it’s sealed and cool you can remove the rings off the jars of you want to. If they are not gonna be moved around air because if you bump them wrong it can pop the seal off. But lots of people store them with the rings off.

From what I researched you could use ground Cumin and dried ground ginger. Hope it works. Allergies suck.
