I love canning videos and I’ll be looking through your other vids. Question because I am new to canning. In other relish recipes I’ve looked at it says to rinse the salt out. Do you do that with this recipe, or just a good draining? Thank you!
Ok…I made the mistake of adding the seasonings with the salt process! I didn’t completely watch the video…do you think the relish will still be ok? And would I still add the seasoning with the sugar cooking process?
To can veggies you need to add salt, vinegar, and sugar. If you play with these ingredients, the amounts, or try to replace them with substitutes you run the risk that your vegetables will spoil. You’re playing Russian Roulette with your zucchini relish. 😞🤢🤮

Hi and welcome to the world of canning! I do not rinse the salt. I usually use less salt than other recipes and I let it strain as much as possible.

I have never used any other alternative sweetness. If you use it, let me know how it comes out.
Penny Bially, if you wanted to use monk fruit it is a 1:1 ratio with sugar, so that might be an easier sugar alternative.
