1 serving: 1 egg yoke, 55 grams unsalted butter, 30 grams water, tiny squeeze of lemon juice to taste, shake of cayenne, pinch of salt. Saving this comment for my own convenience
John, is it possible to make a Hollandaise sauce using the yokes of boiled eggs while using this method and the other ingredients?
I was just watching a video of Jacques Pepin showing Julia Child his method for making hollandaise, and he mentioned that he liked a little bit of cayenne in his. Not that you need it, but I think that quite solidifies the case for cayenne in pretty much everything!

For those of you who don't have 'sticks' or 'marked tablespoons' on your butter:
4 tablespoons (57g) cold unsalted butter, cubed
2 tablespoons (28g) cold water
1 tablespoon (15g) fresh lemon juice
Thanks for this Chef John! I've always had a love/hate relationship with Hollandaise. I love to eat it, but hate to make it! Using the traditional method, mine failed at least 25% of the time. I will try this tomorrow morning and hopefully it will replace the hit or miss method I've been using. :D

Yeah I totally believed you when you said I'd be whisking for ten, maybe 15 minutes!!! I absolutely believed you. I was prepared for that. I was ready. The apprehension and the anxiety were off the charts. I took a deep breath and started.
Yet in only 90 seconds my perfect Sauce Hollandaise came together and my eggs benedict was flawless thank you very much.

BTW, you're wondering "what about the blender method?" I'm not a big fan. In addition to cleaning more things, I don't feel you have the same control as you do here. Besides, you/we need the exercise.

Yeah I've been in a Greek/Italian fusion restaurant for a year and a few months, I just want to go to a culinary school to expand my horizons on what I can do with new techniques and what not. But if you don't know anything current it's fine, thanks anyway, still love your easy relaxing recipes, always nice to find a place with new ideas to build on!

This worked! Although I was lazy and used my hand blender and pot on low heat, turned out nice and creamy kind of fluffy, so good! Thanks Chef John!

Every time I make hollandaise with this technique now I thank you and I say a short prayer for your health and well being. This is so great that I have begun to call this Micewicz sauce. You ARE a genius. I am a diebetic and am on a Keto diet so I use this often. It is so easy and it is also so easy to make other sauces with it also. I love you.
This is my favorite cooking channel , I've recommended it to everyone that likes cooking , or just want a recipe. I tried this, and it worked fabulously! The first try, i got too much lemon juice, but I tried again, and it worked so well, I went to church and thanked God he sent you to me. This is heaven sent, and I'm not kidding. I have been using the packets on Sundays but that stuff is crap, and restaurants want too much, so this is a revelation. Thank you.

Okay, I just saw this post today, so had to try it. Not because I needed Hollandaise for any particular dish...just because I wanted to see if it worked. It did! I was totally blown away. I made it with waaay too much lemon juice, but that was entirely my fault, as I didn't measure, just squeezed it in. Thanks for this, Chef John, as you've made my life so much easier!

Wow! I made this my new year's resolution to perfect hollandaise sauce and, thanks to this video, I've finally done it! Every time I've made it before it's been too runny, this time it had full body and I am so excited. brilliant Chef John but I *might've* done you one better.. I decided to do this in a double boiler because i only have Pyrex bowls in the house.. and then i thought to myself.. what if i used the "poach in plastic wrap" method on my eggs? could I then poach them in the pan of simmering water under my bowl *at the same time* i'm cooking the hollendaise? The answer is... you better believe it. I dropped my prepped eggs into the simmering water when the hollendaise was just to the foamy stage and by the time the sauce was done.. the eggs were perfect!

Nice to see this, since I have done so myself for a couple of years now. It works great on bearnaise sauce too! My sauces has never curdle or split using this technique! Recommended to anyone even if every famous chef will spit out their coffee in rage!

Ok chef, so I've been watching your videos for quite a long time already and I've made lots of stuff with their help, but this one.. this one is amazing. I love eggs Benedict, but sadly in my country sadly you can't eat it anywhere, so you absolutely have to make it by yourself and this double boiler thingy was my archenemy from the start, it is just so complicated and i hated it (therefore my hollandaise wasn't always as good as i wanted it to be), so I saw this video yesterday at like 4 AM and I was like.. I have to try this. Results were amazing, it was the best I've ever made, my life has become way easier with your help, so thanks a lot!!

So since today was mother's day I tried this recipe out for eggs benedict..... and it was legit perfect, like you couldn't taste the difference between this method and the traditional method. When I as done with it and let it sit, it split a tiny bit but I whisked it every 5 minutes and the end result was phenomenal. Thank you Chef John from me and my mom :D

Omfg!! I'm ecstatic about this! Just made it and was unsure about the amount of butter. I used 3 yolks and about 5-6 tbsp of butter. Sub'd sriracha. Absolutely amazing! I oversalted, but I've made that mistake so many times. Keep whisking and you're golden. My heat was up a little high so it was done quickly. Put over eggs bene's and it was the best hollandaise I've ever had. ❤ I think the sriracha put it over the top! 😍👍👍👍 Thank you Chef John!
