- This spaghetti Carbonara recipe is far from the authentic Italian one, and it’s not meant to be. Cream is never to be seen anywhere near an Italian carbonara and I totally respect that.
This version however is a French/Italian fusion recipe, using cream instead of eggs. Let’s face it, cream and pasta are a culinary marriage in heaven, add a little Parmesan cheese, some good quality ham, and voila! Something magical happens. Plus there’s no stress of overcooking or scrambling the eggs.
I’ve notched it up a little more French way by using Crème Fraiche, which gives it a nuttier slightly sour taste, a little garlic, shallot, and of course a dry white wine French style. A simple delicious meal that can be made under 20 minutes. You’re going to love it, so give it a go today. Enjoy Spaghetti Carbonara Francese!

I live in France and I’ve had this style of carbonara many times in various restaurants. It’s often served with a whole egg yolk on top of the pasta, for you to mix in. Yum!!!!!

I had this sort of carbonara in 2 or 3 restaurants in or near Nice. It was always served with a whole egg yolk on top of the pile of pasta and you’d mix the egg into your pasta and the sauce. Delicious.
This is one of my favourite recipes of all time. It comes out amazing every time! The only thing I do differently is add lots of fresh, thinly sliced red chili to make it spicy. Love this dish!

This is a perfect version for the average home cook. Authentic carbonara is a bit daunting (not to mention expensive if you use guanciale).

@@recipe30 I thought pepper is a lot in the authentic recipe because it only contained raw eggs, so I was glad you add it a lot too in your great recipe, although you used cream instead of eggs.

The Italians have nothing to worry about. And the only thing this has in common with Carbonara is they’re both pasta dishes.

@@recipe30, come on. Let’s set aside that Guanciale really has a very distinct taste. Apart from the pasta, Carbonara only has four ingredients - pork, EGG, pecorino and pepper. You changed/dropped all but the pepper. And the changes are not exactly minor. They constitute a very different tasting dish.

Joel my good Aussie/"French Chef" friend, outstanding dish, absolute perfection, French dishes are the richest flavored dishes in the world & you nailed this, love the thicker spaghetti with this dish, going to make this, Whiskey is on high patrol alert, lol, this dish reminds me of a great dish from French Chef Jacques Pepin', you are probably familiar with him, he is awesome, Cheers Mate on this dish, above & beyond the call of duty.
Ham and cheese pasta is very common in France, I do prefer the classic Italian Carbonara, but this is a close second, and simple to make 👍

Have no qualms about this recipe not being absolutely delicious. Watched the video on my phone while waiting for a doctor's appointment. Went to the store immediately afterward & purchased the ingredients for tonight's dinner. What's Whiskey think about getting cheese instead of a bone or some meat? You rock Chef Joel.
