There'd be no game in the first place if Ezio just broke down and didn't do anything after his family got killed. And in general, fictional characters by default don't face adversity, they don't make decisions, they don't have to find the strength to carry on. Someone imagines them and says that they do those things and that's that. Nothing they do or achieve can be truly unbelievable in the sense of the word that's been used here.

Ezio is such a fascinating protagonist. Despite us already given the knowledge we know about Altairs life, we get to see Ezio at birth and in his teen years. That’s the kind of character buildup I admire.
