We're talking about skilled artisans (who have families to provide for) making 13-16 dollars an hour, which is the norm here in Tennessee. The only 2 who weren't were myself and another fellow- he now works for me and we make a great team making very good money.

They don't get officially "hired" by RUclips or negotiate a contract, but YT does do a portfolio check of each potential partner's videos before making them partner, and they also have a Partner contract which lists the promises made to each YT partner. Considering this, how should we label YT partner as workers, and what rights do they have? Does it depend on the state? I've read that in New York they recently unveiled a law that gives freelancers more guaranteed rights. Do you advocate for the expansion of freelancers rights?
Independent contractors are not entitled to meal or rest breaks or any sort of paid lunch or paid time off. If you're not working because you're taking a lunch break, you typically aren't entitled to be paid for that time.

Now, employer is asking for my SSN and is telling me my last check for work already done wont be given until I give my SSN, is this even legal?, I dont feel like just giving my social to just a person (is not even a company), Am I in the wrong?, I will give it but I dont like his/her way and it doesnt sound even legal to me, that this person does not pay me or “kidnaps” my pay until I give what he/she wants... Any thoughts?
They can't really withhold your pay because of it, but they should be asking you to complete a W-9 form. That will give them your name and SSN for tax reporting purposes.

As a independent contractor can the company your contracted too, can they take out for lunch, when doing the work by hours?

If you are IC I would register as a llc or sole proprietor. For tax purpose and I would apply for tax id or use your ssn complete a W9 form..
