@@LogHewer Apologies for the late reply. It mostly depends, there are times where the lumber has been air dried before we get it and other times where it is fresh off the mill. Sometimes its a mix of both, depends on what was available to us
We’re stationed up here in Ontario, we get our kits from an Amish builder named Jonas. So if I were you, I’d maybe find the nearest Amish community to your location, and ask around to see if any of them would be willing to build kits for you. Hope this answers your question!
Is there a specific moment in the video you’re referencing or just in general? Either way, we will use either or for a number of reasons, hammers offer more control over nail depth, size with little damage to the wood. Air nails need to be set up, the hose can get in the way, but it’s good for rough work that gets covered

Where do you get your kits from? We are a shed builder in Virginia that uses conventional 2x4 framing. However I do like the shed kits you have.

So, I'm not a framer, but why use a nail gun. Then use a hammer. Why are you not all using a nail gun? Spirls nails ?
