- Arroz caldo is also known as Rice soup, Congee or Rice Porridge is most popular in Asian Countries. It is a Traditional Filipino dish most often served as a snack or a meal on its own. This version is special because I added a special ingredient which is perfect for this recipe. It is best served during winter or rainy season or to someone who is sick as it gives you a warm feeling. Serve it while it's steaming hot.

Ingredients:
2 thumbs-sized ginger
5 cloves garlic
1 medium-sized onion
5 pcs chicken wings
3 & 1/2 tbsp fish sauce
1/2 tsp ground pepper
3/4 cups of glutinous rice
3/4 cups of jasmine rice
9 cups water
1 & 1/2 tsp sugar
2 stalks of lemongrass
1 tbsp safflower or kasubha
topped it with hard boiled eggs, toasted garlic, spring onion & chicharon
sprinkle it with kalamansi or lemon

noong ako'y nag aaral pa lang sa los banos, laguna noong unang panahon at nakakakain ng arroz caldo sa turo turo, laging may kulang at iyon ay ang tanglad...at pag sinasabi ko na wlang tanglad ito, ang tanong ng mga Ksama ko e "tanglad? Ano yun?". kc sa mga ilonggo hindi nwawala ang tanglad sa arroz caldo...ito ay pantanggal ng lansa ng manok at the same time pampabango pa sa lutuin...nang dahil sa internet, dumami mga food bloggers/vloggers sa FB at YT...naintroduce nila sa mga Tagalog at taga Luzon ano ba ang tanglad na ito...sadyang masarap ang arroz caldo pag may tanglad...
Di naman ng dahil sa blog, may mga parts talaga sa Luzon, o mga tagalog na hindi kilala ang tanglad. Pero sa southern part ng luzon matagal ng gumagamit ng tanglad sa mga lutuin lalong lalo na sa mga ginataan at malalansang pagkain

I add grated or finely chopped fresh turmeric root to give the "Arroz Caldo" a nice yellowish colour and also a fragrant aroma to it. If it is available and can afford it some saffron. This will give a great taste and aroma as well. It is abundantly available here in Spain.
Any rice dish is always good with saffron.

Thank you for the recipe!!! I started making this Xmas and posted on my FB; I received so many orders during the holidays! People here prefer the healthier version, boneless skinless chicken and no lemon grass nor chicha, but I'll try that next time! I don't slice my ginger, it's easier to peel, freeze and grate... that way it doesn't get wasted as not everyone eats the ginger! You should try it...another great cooking TIP. McKinney, Texas

Pwedi rin kasi ganyan dati ako magluto ng arroz caldo (purong regular na white rice lang). Pero mas masarap talaga kapag 50/50 (sweet rice and regular rice).

it the same as sweet rice. fun fact, there is at least 100 varities of sweet rice for sushi rice in japan. I'll stick with non glute rice as glute rice takes so much longer to cook
