Great explanation video! I have a gaggia classic 2019 and I am experiencing inconsistencies in the water flow of my machine. Sometimes decrease other increases; this creates inconsistencies also in my shots and problems in dialing the espresso! Is there any fix you can suggest? I don’t understand fully the extraction time “rule”. If I understand correctly, the time should be roughly specific for a dose/ratio, in this case 18g-36g 1:2 ratio. Let’s say I decrease the dose to 16, if I want to keep the same extraction time I would grind finer, but to me this is where it gets complicated: by decreasing the dose I made the coffee easier to extract, if I also grind finer it will be even easier to extract so the result will be a an overextracted espresso. Am I right? Now, if I was decreasing my dose to fix an under extracted coffe this might work ok, but if I just wanted to use a lower dose keeping the extraction the same the logic tells me I would not have to grind finer
Dose is more linked to the basket size that you use. If in your example you are reducing dose, then you are increasing the risk of channeling because flow rate increases. The aim is to balance dose with grind size to get the best extraction. A lower dose is easier to extract but if there isn't much coffee it may all be extracted in 5secs and the last 20secs may be predominantly water. So it could be deduced that that you've missed out on getting a strong enough concentration of espresso in the cup. Hence, you can grind finer to try to slow down the flow and let the water have more time in contact with the coffee. But you may have issues with channeling toward the end of the shot because of flow and low dose. This is where you may realise you need to increase the dose and balance the grind setting by going a little coarser to get the most consistent shot from start to end.

Hi there! May I ask, are you using 18g of coffee on a 18g basket? Or the original 14g basket that comes with the Gaggia?
I use an ims 18g basket
