    Highway Chicken Curry
    800 gm Chicken…
    3 large tomatoes
    3 large onions
    3 tbsp ghee
    1/2 inch ginger, juliennes
    3 green chillies, slit
    1.5 tbsp ginger paste
    1 tbsp garlic paste
    1 piece cinnamon
    4-5 black cardamom
    6-7 green cardamom
    t tsp cumin seeds
    4-5 cloves
    1.5 tsp red chilli powder
    1.5 tsp coriander powder
    0.5 tsp cumin powder
    1 tsp garam masala
    0.25 tsp turmeric powder
    2 tbsp oil
    3 tbsp Coriander leaves
    500 ml water

    @ChefHArpalSingh Many years ago you got me started on how to cook a highway curry as my first ever dish. I couldnt cook anyting and it was always a train wreck. I cant thank you enough for that Skype. In the 13 years since Ive not just learned to cook a highway curry, I am now the one where everyone wants to come eat at mine. Love it. And my favorite is still my first ever, highway chicken. Thanks so much

    Harpaldada tried this recipe twice...First without ghee because it was not available [turned out ok] and secondly with ghee...Adding ghee changed the whole profile of the dish, it turned out so well that all my friends praised me for it and i was licking my fingers...Since i love Punjabi style food so much i really want to thank you for all your recipes...I have been studying your recipies for over a year now and i must tell you that you really create magic by simplifying the whole process of cooking...

    I like how you are very efficient in the kitchen. Most Indian chefs just kill you with their nonsensical talk stalling around for no reason. You were productive and practical from the very start and that saved a lot of my time, thank you for being concise and efficient and communicating very efficiently and effectively.

    I first came to know about Indian cuisine served in dhabas from Tony Singh's episode of A Cook Abroad by BBC. THIS is absolutely the most treasured recipe not easily found in any RUclips Indian Cooking channels. Very, very good indeed. Great one, Chef! You beat everyone to it!

    Just watching this I remember stopping on a bus ride from Mathura to Jaipur. The food was fantastic. (The bus ride was alarming: I don't think the driver knew there was a brake pedal!)

    I tried this last weekend and it came out great ! The gravy at least.... what I found was missing is the chicken didnt seem to have the same flavour as the gravy. I dont know if I should have let the chicken sit a while to let the flavours infuse into the meat, but I intend to try some more of these recipes :)

    Fantastic video chef and a great recipe.
    By the way ghee is very healthy. It is the cooking oils which are dangerous. Pure butter and ghee are excellent for health.

      STRATMAN firdaus pure butter is terrible for health? what are you talking about, any animal fats ( excluding fish oils) are terrible for you in excess which is exactly what butter is.

      ***** Nothing you have said has been proven or backed up by Science. You have been brainwashed by poor science and propaganda. We have been living on animal fats for thousands of years.

      nope it has. I am specifically referring to saturated fats to clarify ( which is what ghee and butter is). Mono-unsaturated exist in animals and plants, they're fine and good, poly are even better but studies have shown that a good balance is best ones not better than the other.
      Saturated on the other hand are only found from mammals. Clear clear links with cardiovascular diseases, good studies linking to cancer (but this is still discussed).
      And about what you said about living off animal fats for thousands of years, a) we ate a lot less than we do now, our consumption of the fats is far greater, b) incase you didnt realise, people didnt tend to live that long
      but believe what you want, ignore the Global Health organisation as well as basically every health department of governments in the world. Your the one who'll increase your risk as you age.
      Just to finish, look at india. Im indian, almost every relative i have has developed high cholesterol and suffered heart problems, and almost all that have died have died from cardiovascular illnesses. Why? The huge amount of ghee and other saturated fats used in cooking. Compare it to the mediterranean or japan.
