- Jowar roti - no need hot water and extra binding flour | Jowar roti - new recipe. Here's how to make Jowar special Roti a nutritious and gluten-free flatbread made from sorghum millet.
Here's a simple and nutritious jowar recipe
👉Ingredients:
1 cup jowar (sorghum) flour
1/2 cup cooked chickpeas(soaked overnight and pressure cooked)
1 green chili
1/2 teaspoon cumin seeds
1/2 teaspoon carom seeds (ajwain)
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder (optional)
1/2 cup finely chopped onions
1 carrot, peed and grated
1/4th cup Capsicum(green bell pepper), finely chopped
2tbsp coriander leaves, finely chopped
Salt to taste
Water for kneading
Ghee or oil for cooking
👉Instructions:
Pre-cooked chickpea:
White chana(chickpea/garbanzo beans) soaked overnight. Rinse well and pressure cooked using fresh water for about 4-6 whistles. Once it cooked, strain it and use it for recipes.
Prepare Chickpea Mixture:
In a blender add cooked chickpea, green chilli, jeera and water. Blend to a smooth paste.
Prepare dough:
In a mixing bowl, combine jowar flour, chickpeas paste, finely chopped onions, carrot, capsicum, coriander leaves, carom seeds, turmeric powder, red chili powder (if using), and salt. Crumble the mixture. Gradually add water and knead the mixture into a soft and pliable dough. Adjust water as needed.
Rest the Dough:
Allow the dough to rest for about 15-20 minutes. This helps improve the texture of the parathas/rotis.
Divide and Shape:
Knead the dough slightly. And divide into small, equal-sized portions and shape them into round balls.
Rolling the Parathas:
Take a portion of the dough, pat it over the greased butter paper into thin or medium thick. Grease the hand if needed
(OR dust it with a little jowar flour, and roll it into a ball.
Roll out the ball into a thin, circular paratha using a rolling pin.)
(OR use roti press/poori press/tortilla press)
Cooking the Parathas:
Heat a tawa or flat skillet over medium heat.
Place the rolled-out paratha on the hot tawa. Drizzle oil/ghee. Cook for 2 minutes
Flip the paratha and apply ghee or oil on the cooked side.
Cook the other side until golden brown, pressing gently with a spatula to ensure even cooking.
Serve Hot:
Repeat the process for the remaining portions.
Serve the Jowar Flour Cooked Chickpea Parathas hot with yogurt, pickle, or your favorite side dish.

Wonder if this chickpeas' addition comes a breather to me, giving it a bit of binding! Making jolad rotti is a nightmare here bcz it's quite a messy work for the same non-binding nature.
