    For the Broth:
    1 can of tuna fish (425g)
    1 can of sardine fish (110g)
    2 slices of pineapples
    Half Red Onion (dices)
    1 stalk lemongrass, bruised
    Bunch Vietnamese mints leaves, separate stalks and leaves
    1 TBSP raw sugar
    2 TBSP pineapple Juice
    600 ml water
    Half Lemon (Juice)
    2-3 Drops of Fish Sauce
    For the Spice Paste Easy Hack
    2 Tsp instant Thai Tom Yum Paste (Amazon AU link: amzn.to/3OQVPGf | US (SImiliar) : amzn.to/3vXIchH)
    1 Tsp Sambal Chilli Prawn Paste (Amazon AU Link Similar: amzn.to/3Urh0SG) | US : amzn.to/3HKzeH7 )
    Other Ingredients:
    200g rice vermicelli, cooked according to package instructions
    1 cucumber, julienned
    2 slices pineapple, julienned
    1 bunch mint leaves
    1 bunch Lettuce, chopped
    1 /2 Red onion, thinly sliced

    Instructions
    1.) Preparation: Wash all the vegetables, and julienned cucumber, onion, slice pineapples, lettuce.
    2.) In a pot, bring water into boil and cook the rice vermicelli
    3.) In a separate pot, heat some oil and sauté the bruised lemon grass stalks, red onions and blended spice paste until fragrant
    4.) Add in the vietnamese mints stalks.
    5.) Add the Tuna Fish and half of the Sardine Fish.
    6.) Combine water, Vietnamese mints leaves, sugar , sugar, pineapple juice, 2 slices pineapples, lemon juice and fish sauce. Bring to a simmer.
    7.) Adjust the seasoning if needed and remove lemongrass stalks.
    8.) Assemble bowls with cooked rice vermicelli, sardine fish, cucumber, mint leaves, lettuce, pineapples, sliced red onion, and tuna fish.
    9.) Pour the hot broth over the assembled ingredients.
    10.) Serve immediately and enjoy your homemade Penang Asam Laksa with fresh herbs from your garden!
