For an easier butterscotch fudge or in Spanish " leche que mada" literally translated," burnt milk". Use butterscotch chips instead of chocolate chips from the earlier three ingredients fudge. I always add nuts because I love nuts. My father would make a big pot of fudge,from scratch on the first cold day here in San Antonio,he'd open all the windows in the house,let the cold air blow through,make the fudge,put it on our little screen porch to cool and the he'd cut it and we'd all dive in! I used to make the from scratch fudge before but it is so much work,standing,stiring and he taught me to check the stage by using a room temperature glass of water,you just take a little on your spoon,drop it in the water,when it forms a soft ball,it's at the softball stage, if you wanted hard ball then you do the same and it'll form a hard ball or a stiff string in the water. What fun it is!
This is a great, old-fashioned recipe. This is going on my Christmas cookie gift trays. While it's still warm in the pan; I sprinkle Heath Bar toffee bits on top. Also, finely chopped pecans.
Thank you! I often look for 'Traditional' fudge recipes as I cannot often find, or have the skill / patience to make from scratch, condensed milk. Will definitely be giving this recipe a bash!!
Yup grainy is easier than making it smooth. And if you store it in the fridge it brings out a bit more moisture and makes it graining. For example this batch was smooth and creamy at first, but I stored it in the fridge, now it has that more traditional (British) grainy taste which is nice too.

Just curious! Is your knife a Wearever? I had a complete set years ago n loved them. Made of bowling ball material. My daughter talked me out of them.😭

If you don’t have a thermometer, you can use the cold water test to see if your fudge is at the correct stage. But I figure that it takes a little longer than if you were to use a thermometer. Another idea I am thinking of is once you know that that is how long it took for your fudge to come up to the correct stage, the next time you make it, you can try to time it with your timer without the use a thermometer & see if that works for you if you don’t want to use one & if it works, then you won’t need to break out your thermometer anymore as long as you remember how long it takes for your fudge to get up to the soft ball stage. I hope that also works too but only if you have had experience for a long time making this fudge.
