    3 1/4 cups light brown sugar
    1 1/2 cups evaporated milk
    1/4 teaspoon salt
    4 tablespoons butter
    1 teaspoon vanilla extract

    Just put a piece of was paper down and pour candy in it. Lift wax paper out and candy comes out great everytime. Candy looks awesome!

    Years ago I was visiting Louisiana and had the best homemade praline fudge. I think your recipe might be the one I have been searching for. I don't like fudge that is made with chocolate or butterscotch bits (hey, I won't turn down a piece, but) I like cooked fudge best.

    I just finished making this fudge exactly the way you did, and it turned out perfectly! I thought it would yield a bigger batch, so I toasted a few more pecans than I probably should have, but making it a little nuttier sure doesn’t hurt it! Wonderful recipe! Thank you!!! I’d never noticed about the separation of the milk solids before, but I really could see it as it was cooling! I was so careful this time to not mix in the sugar crystals, though I’m not 100% clear on how you could possibly NOT end up mixing some in while stirring, since the mixture will move along the sides as you mix. Mine didn’t turn out grainy at all, though, so I guess I somehow did it right! :).

    Looks delish Phyllis! Sometimes my fudge turns out wonderful and sometimes it flops bigger than Texas, I can't pin point what I'm doing wrong during the flops. Thanks so much for your video and all the little tips!

      Hi Diana, I'm no expert on the subject of fudge but I can tell you from my past experience with fudge it's usually one of two reasons. Not cooked long enough or cooked two long - it needs to be right at the soft ball stage. Stirring when the fudge is in the cooling stage - after it's cooled when beating begins you must continue to beat not pausing at all. Hope this helps.

    Oh, thank you so much Phyllis, I am lousy at fudge, your instructions were the best ever. Could you use your Kitchen Aid to help beat it? Just wondering. I would love to see you make some chocolate fudge. I have been using the recipes that use chocolate chips and marshmallow cream, it just does not taste like the good old fashion fudge, like my hubby's Mom used to make. Your fudge looks delicious.

      I did a video last year on making chocolate fudge. I used buttermilk instead of regular whole milk just to make it not so sweet. The original recipe calls for regular milk. Here's the video "Old Fashion Fudge" ruclips.net/video/dTNhbHNeuD4/видео.html

      I grew up making fudge with my mom, I had to give up making it because I had to beat buy hand until it made a soft ball or my arm felt like it was going to fall off❤️This was something that family always looked forward too my mom is gone now but I am the only who tried has tried too keep thatChristmas tradition on.♥️I you mom, I hope my children & grandchildren will be able to carry on.

    Would you happen to be in Georgia by any chance. On your chocolate fudge recipe I noticed you saying you have alot of pecans around you. I am really from Columbus, Ohio but I moved to central Georiga in 1991..

    Goodness that fudge looks delightful! Wonderful recipe Phyllis. Thank you for the tips also. Did you put it in the fridge to set? Or t room temperature?

      I just left the fudge on the counter and it set in about 15 minutes - that's when I should have cut it but I was doing something else and forgot it for a couple of hours.
      Leaving it like that makes it much harder to cut into squares.

    Making these type of fudge recipes is total chemistry. Don't let the sugar crystals touch the cooked part....Kind of stressful!

    Hi I just found your recipe and it looks delicious! Can I use regular milk or condensed milk in place of evaporated milk? I don't have any on hand at the moment.

      Never tried it with anything but evaporated milk. I'm afraid the regular milk would need to be scalded before using it and I'm sure the condensed milk would be too sweet and too thick. Of course you could try and see how it works for you.

    One question, my grandma used to make a delicious peanut dish. All I remember is her cooking peanuts in a sweet RED sauce. Then it hardened. Do you (or anyone) know what it could be?

      I always use salted butter in every recipe. I don't even purchase the unsalted any more.

    Phyllis can I substitute the evaporated milk with clotted cream and if so would the amount of milk/cream change?

      Not sure whether it would work or not, you need to go ahead and give it a try. The liquid would be the same.

    I always set mine off the heat when I test it, because it can cook to too high a heat really fast.

    At the end where she is beating the cooled mixture, it is better to start the process of beating to mix in the butter and vanilla BEFORE you put in the nuts, that way the butter incorporates fully before you add the nuts into the mixture.

    Phyllis a better way to stir is to not use metal instruments as they will definitely scratch up the pot and lessen its capabilities it's better to use a rubber or wooden spatula instead of a metal one. also much less likeliness of burning one's self since metal is a strong heat conductor.

      Here in America we call this butterscotch and so in Italy you call it "penuche" this is simple the difference in our languages.

      @@PhyllisStokes i AM IN AMERICA. Since the early 1800s my family has been here. I have never called it butterscotch. The Italian part of that is a pronunciation difference, nothing more... Pan new chi in Italian, in English it's pronounced more like Pen new chi. That is the only difference, any fudge made with brown sugar is Penuche.

    I'm pretty sure this is what my family called Brown Sugar Fudge, or Penoche Fudge. I never learned family recipes for candy, because I don't like sweets, so much and left it to others. Now, I'm kind of sorry.
