G'day from Australia , if you want year round green onions that grow even in the desert and though light snow look up Egyptian walking onions , they provide a very ( even more tasty IMO) tasty green onion year round and a onion that is wonderful for all uses but especially dehydrated ( we snack on them instead of chips ) onion , you can transfer the beaten eggs into anything with a pouring lip to get a finer result .. cheers folks
I am suprised that they use corn starch to get that thicker texture. I have been making my own version for years. Started gathered recipes and in Asian foods they use a lot of corn starch to get that thickened texture of sauces and soups. Even my Mongolian beef contains cornstarch. I add 1/2 cup of shredded carrots , 1/2 cup peas and 1/2 cup onion or green onions. The amount of added veggies are to taste, I add a touch of turmeric, a pinch of ginger. My Mongolian beef tastes like take out. Great recipe. Easy, quick and body warming. Learned to make Chinese noodles but it’s a pain in the arse to make.
You need freshly ground black pepper. Only freshly ground pepper has pepperin. Plus you need a fat also for it to be absorbed. Look up Golden paste recipe.

Hi I saw your comment and thought I'd put my 2 cents in. Nutritionally it'd be about the same but you wouldn't get the variation of yolks and whites. Anyway that's my take on it. I hope that this helps you.
Here's a tip, put the eggs in a ziplock bag and poke a small hole in the corner and squeeze them out that way. You will get small ribbons -

It took me forever to discover sesame oil. I say it changes things from homemade to restaurant flavor. It elevated fried rice instantly.

I use white pepper. That way, you don't have black specks in your soup.

Like the recipe, especially adding turmeric (with added pepper). You must have chickens. Store bought eggs don't have the nice dark yellow yokes!
