@@marismith1927 Hi Mari ! 🙂 #1 - Real ( authentic ) shortbread cookies do *NOT* contain any almond powder. Your teacher may be younger, a new generation that doesn't know or appreciate the history of this type of cookie. Butter cookies - is a "new" name for shortbread cookies. Shortbread cookies will contain an ingredient, originally corn starch OR RICE flour. What does this do ? -- it lowers the amount of protein in the recipe, you are basically removing "x" amount of regular flour and replacing it with CORN STARCH or RICE flour, both of which do not contain any gluten like regular flour does. So now look at almond flour... there is NO gluten like you find in regular flour in almond flour, so it CAN be use in a cookie like this, - but at a very high cost. Almond flour is expensive ! $$$. Corn starch is inexpensive, and so is rice flour. All 3 of these lower the gluten content in the dry part of the recipe and this gives this type of cookie the crumble it exabits. While your teach is not really correct, she is correct that using almond flour is OK, but they most likely don't realize that traditional recipes use corn starch or rice flour. Corn Starch in North America is white... it is NOT the same as the yellow substance called "corn meal ) I hope this helps. Your sister is correct by the way. To end off, when you see "butter cookie" this is just a new modern name for a very old cookie called the shortbread cookie which started in Europe. BTW, if you use brown sugar in a shortbread cookie you have just made Scottish shortbread, that's something that many don't realize either. I just thought I would add that in for fun ! 🙂
@@BakeLikeAPro Hallo sir. I understand now thank you. You know what is really weird? The school handbook (for higher standards) say specifically Maizina which is cornstarch. Yes we also have corn meal but ours is white and people cook porridge with it. Definitely not suitable to use as cornstarch. I didn't know about brown sugar for Scottish shortbread that's so cool. I assume the sugar must be fine or can it be used as is? Then there is the matter of vanilla extract and essence. When is it "mandatory" to use extract? Thank you again
Hi again Mari ! wow, interesting about your school handbook ! Never lose that ! In 20 years you will look back in this book and it will give you great memories ! 🙂 Yes, sugar is fine, regular white granulated sugar is what I use for the most part, some recipes use powdered sugar, but again this increases cost, and in the old - original days, it was *regular* sugar being used. ( Shortbread goes so far back in history and people did not have fancy sugars nor the money to buy fancy sugars ) ... as for vanilla, shortbread has been around for so much longer than vanilla has been. You can find out if you put time into it, when vanilla was first used in Europe for example, and it was much later than original shortbread recipes. Last thing, shortbread - the term means the cookie is short, - it does not rise high, and it is crumbly. ( the corn starch is what adds to this crumble ) 🙂 We must also look at the recipe and see the high ratio of butter used in the recipe, and this lends to the cookie not trying to rise very much. Many purists will also tell you that adding vanilla detracts from the shortbread cookie, as the butter is the star of the show.
I have been searching for a good shortbread recipe and I think I may have found one in yours! I will make them this weekend and come back here and let you know. Hello. I made these cookies last night and they were buttery, flaky and the dough was perfect. One thing I found that they weren't sweet enough. I made some this morning and did 1 stick of unsalted butter and one stick of salted butter. I added 1/4 cup of granulated sugar and some vanilla. OMG! With your help...PERFECTION! Thank you so much!

Excellent I am going to make it again but double the recipe. I am also going to try grinding some walnuts to a fine consistency to add to the flower and I will make a small well in some of the cookies and add raspberry preserves in the well. Thank you for this wonderful recipe.
ah yes, this is what my mom used to do... she would ground walnuts and add it to the flour, and also add tiny pieces to her shortbread. She made a lot more Scottish shortbread which uses brown sugar. I'm glad you are enjoying the recipe, and thank you for watching, I appreciate it !

You can check from the main page of my channel for "shortbread" or "butter cookies" The cornstarch can also be replaced with rice flour. Landotter1 Hi again Landotter1, yes, Canada :-) The country of ice and snow, I have a good 3 feet of snow, here already, and we are only the 2nd day into it being winter ! If you can find a brand called "Walker's" do try it out, they make amazing shortbread cookies, they really are the only true company that makes them, they are from Scotland, and are authentic as you can get. They are a truly a little bit of heaven in your mouth LOL. Nabisco is huge up here, Keebler not so much, but we do have them in certain stores. I understand why the corn starch. it make it lighter. My family has an Albanian cookie that instead of dusting with flour, we use cornstarch. Just made your recipe, and we loved it! I did have to adjust the the time and temp, a little. Probably my oven. Thank you!
Looks delicious,,,I've made shortbread using double quantity ,icing sugar cornstarch,, and plain flour and butter, it dident last long!!! But I like a little more of a golden color ,, I might make some during the week, a floral auger paste cutter can be used for designing on the cookies,to not to cut them out with it just an embossing on them looks very pretty too.👍☺️

I love the addition of cornstarch in this recipe mark. They look so buttery and delicious. Do you recommend to keep them at that thickness? If you go thicker would they need longer baking time?
Hi Angie, thanks :-) You can make them that thick or even go thicker, I make smaller ones ( rectangles ) and make them at least 2x that thick. So, yes, you can make them a lot thicker, you will have to bake slightly longer, but keep an eye on them. If in doubt, always bake 1 or 2 just for a test and see in your oven, that way you know you can bake the whole batch and they are perfect. I hope this helps a little bit :-)

I am pooped, I just did about 2 hours of snowblowing. I did about an hour yesterday ( we got about 8" of snow yesterday ) and overnight we got I'd say another 8 or 9" ... insane is all I can say. I saw neighbours up on a ladder clearing snow off their roof.... scary stuff when your have 3 feet of snow on a roof ! And to think yesterday was our first official day of "winter" I hope Santa is good to you this year ! :-)

Hi Joy 🙂 yes you can, without a problem. Oil, you cannot use with this type of cookie, these also go by a new name which is "butter cookie" hence the large amount of butter in the recipe. Trust me, it's money well spent, you will love these. Please check out my newer recipes for shortbread, I have a little mini recipe that I made in a cake pan, and there's no need for a cookie cutter. I made and it was absolutely phenomenal!!! It didn't make it past the cooling down stage.. I dipped it in some chocolate ganache that I made and it gave me rave reviews!!! All my future recipes are coming only from u next time.. Cheers!!

This is the way my mother made them only she didn't roll them out. She just dropped them using a spoon on the cookie sheet. My sister still makes them that way as gifts to her friends. The recipe was on the back of the cornstarch box.

@@marismith1927 Hi Mari ! 🙂 #1 - Real ( authentic ) shortbread cookies do *NOT* contain any almond powder. Your teacher may be younger, a new generation that doesn't know or appreciate the history of this type of cookie. Butter cookies - is a "new" name for shortbread cookies. Shortbread cookies will contain an ingredient, originally corn starch OR RICE flour. What does this do ? -- it lowers the amount of protein in the recipe, you are basically removing "x" amount of regular flour and replacing it with CORN STARCH or RICE flour, both of which do not contain any gluten like regular flour does. So now look at almond flour... there is NO gluten like you find in regular flour in almond flour, so it CAN be use in a cookie like this, - but at a very high cost. Almond flour is expensive ! $$$. Corn starch is inexpensive, and so is rice flour. All 3 of these lower the gluten content in the dry part of the recipe and this gives this type of cookie the crumble it exabits. While your teach is not really correct, she is correct that using almond flour is OK, but they most likely don't realize that traditional recipes use corn starch or rice flour. Corn Starch in North America is white... it is NOT the same as the yellow substance called "corn meal ) I hope this helps. Your sister is correct by the way. To end off, when you see "butter cookie" this is just a new modern name for a very old cookie called the shortbread cookie which started in Europe. BTW, if you use brown sugar in a shortbread cookie you have just made Scottish shortbread, that's something that many don't realize either. I just thought I would add that in for fun ! 🙂
@@BakeLikeAPro Hallo sir. I understand now thank you. You know what is really weird? The school handbook (for higher standards) say specifically Maizina which is cornstarch. Yes we also have corn meal but ours is white and people cook porridge with it. Definitely not suitable to use as cornstarch. I didn't know about brown sugar for Scottish shortbread that's so cool. I assume the sugar must be fine or can it be used as is? Then there is the matter of vanilla extract and essence. When is it "mandatory" to use extract? Thank you again
Hi again Mari ! wow, interesting about your school handbook ! Never lose that ! In 20 years you will look back in this book and it will give you great memories ! 🙂 Yes, sugar is fine, regular white granulated sugar is what I use for the most part, some recipes use powdered sugar, but again this increases cost, and in the old - original days, it was *regular* sugar being used. ( Shortbread goes so far back in history and people did not have fancy sugars nor the money to buy fancy sugars ) ... as for vanilla, shortbread has been around for so much longer than vanilla has been. You can find out if you put time into it, when vanilla was first used in Europe for example, and it was much later than original shortbread recipes. Last thing, shortbread - the term means the cookie is short, - it does not rise high, and it is crumbly. ( the corn starch is what adds to this crumble ) 🙂 We must also look at the recipe and see the high ratio of butter used in the recipe, and this lends to the cookie not trying to rise very much. Many purists will also tell you that adding vanilla detracts from the shortbread cookie, as the butter is the star of the show.
I have been searching for a good shortbread recipe and I think I may have found one in yours! I will make them this weekend and come back here and let you know. I have a young friend, a little boy who wants to learn to bake so while teaching him that art I plan on including these. Your video was great! Thanks So much!

Hello. I made these cookies last night and they were buttery, flaky and the dough was perfect. One thing I found that they weren't sweet enough. I made some this morning and did 1 stick of unsalted butter and one stick of salted butter. I added 1/4 cup of granulated sugar and some vanilla. OMG! With your help...PERFECTION! Thank you so much!

Excellent I am going to make it again but double the recipe. I am also going to try grinding some walnuts to a fine consistency to add to the flower and I will make a small well in some of the cookies and add raspberry preserves in the well. Thank you for this wonderful recipe.
ah yes, this is what my mom used to do... she would ground walnuts and add it to the flour, and also add tiny pieces to her shortbread. She made a lot more Scottish shortbread which uses brown sugar. I'm glad you are enjoying the recipe, and thank you for watching, I appreciate it !

Just got into bed after baking these and, man, are they melt-in-your-mouth gooood! I'm going to probably drizzle them with something sugary in the morning for my kids to like them. You can check from the main page of my channel for "shortbread" or "butter cookies" The cornstarch can also be replaced with rice flour. If you can find a brand called "Walker's" do try it out, they make amazing shortbread cookies, they really are the only true company that makes them, they are from Scotland, and are authentic as you can get. They are a truly a little bit of heaven in your mouth LOL. Nabisco is huge up here, Keebler not so much, but we do have them in certain stores. I understand why the corn starch. it make it lighter. My family has an Albanian cookie that instead of dusting with flour, we use cornstarch. Just made your recipe, and we loved it! I did have to adjust the the time and temp, a little. Probably my oven. Thank you!
Looks delicious,,,I've made shortbread using double quantity ,icing sugar cornstarch,, and plain flour and butter, it dident last long!!! But I like a little more of a golden color ,, I might make some during the week, a floral auger paste cutter can be used for designing on the cookies,to not to cut them out with it just an embossing on them looks very pretty too.👍☺️

I love the addition of cornstarch in this recipe mark. They look so buttery and delicious. Do you recommend to keep them at that thickness? If you go thicker would they need longer baking time?
Hi Angie, thanks :-) You can make them that thick or even go thicker, I make smaller ones ( rectangles ) and make them at least 2x that thick. So, yes, you can make them a lot thicker, you will have to bake slightly longer, but keep an eye on them. If in doubt, always bake 1 or 2 just for a test and see in your oven, that way you know you can bake the whole batch and they are perfect. I hope this helps a little bit :-)

I am pooped, I just did about 2 hours of snowblowing. I did about an hour yesterday ( we got about 8" of snow yesterday ) and overnight we got I'd say another 8 or 9" ... insane is all I can say. I saw neighbours up on a ladder clearing snow off their roof.... scary stuff when your have 3 feet of snow on a roof ! And to think yesterday was our first official day of "winter" I hope Santa is good to you this year ! :-)
These cookies are VERY good and the dough is perfect to work with, it is not fussy at all. I really love this recipe and for sure every year I will replace it with my original one.

Hi Joy 🙂 yes you can, without a problem. Oil, you cannot use with this type of cookie, these also go by a new name which is "butter cookie" hence the large amount of butter in the recipe. Trust me, it's money well spent, you will love these. Please check out my newer recipes for shortbread, I have a little mini recipe that I made in a cake pan, and there's no need for a cookie cutter. This is the way my mother made them only she didn't roll them out. She just dropped them using a spoon on the cookie sheet. My sister still makes them that way as gifts to her friends. The recipe was on the back of the cornstarch box.

I never thought of this, now I know where the song came from. Thanksgiving is almost here and I need quick to baked. I'm not good at this but I'm gonna give it a try, of good friend of mine gave me great cook book and I myself bought a Christmas cook book when we were working at a high school together. . I know that the books have cookie recipes for sugar cookies, but I don't have the time to go through them. can you do one and I also have a cookie press with different seasonal disk that my Assistant Director gave to me.

Did it today! Maybe I rolled the dough too thin because the cookies tend to break very easy but this taste is awesome. I out a little bit vanilla in it. By far the best shortbread I've devoured so far 😂
