The butter we get here (in India) has such a high fat content that I feel really full after a couple of bars (we made thin bars not cookies). Definitely could use a flavor like lemon zest. I like when the poster (you in this case) explains the role of each ingredient, and answers what s/he thinks the viewers are asking in their minds :) For example, I was thinking about skipping adding the corn starch, then your explanation came to change my mind :) BTW, can we add egg(s) (probably the egg-yolk(s) alone without the egg-white) to them? I think it may add shininess and probably more softness, no?
Hi chef, I watched yr video yesterday and decided to try it today. They were lovely with just a minor problem. It felt powdery wen I eat it, but it tasted great. I tried making butter cookies b4, but the recipe I followed gave a soft, almost runny mixture. Didn't go well at all. Wen making it today I was so afraid they would come out tasting as bad or soft and mushy as the 1s I did b4. But it came out great, I literally pat myself on the back for doing well. I made these tonight. I measured precisely but the 3/4 cup of butter seemed like so much butter that I wondered if it was 3/4 of a stick. haha At any rate, 3/4 is under two sticks. I had mine soft because it was sitting at room temp but for some reason it was too much butter. So I added half more of each dry ingredient measurement. That really made a huge improvement and they turned out perfect. Thank you so much for this recipe.

Hi Daphne, I'd use a 1/4 cup of cocoa powder maximum. You may even wish to use 1/8th to start. Then look at the mixture, and gauge it from there. To keep the recipe the same, you will remove some of the corn starch. You want the ratios to stay the same in the recipe so the cookie dough does not become too dry.
Corn flour in North America is yellow and very different. Do *not* use it if it is yellow. What colour is your corn flour, because in some areas of the world, corn flour = corn starch. It's very confusing. It is really an easy and amazing recipe. Was a big hit at ours, next time my daughter wants me to sprinkle some rainbow sprinkles or hundred and thousands as they are called here. I did add a tsp of vanilla extract. Do you think they will taste nice with a bit of lemon zest?
The authentic name for these cookies "shortbread" cookies, there is NEVER any chemical leavening agent added ( baking soda or baking powder ) They are a cookie that melts in your mouth, and crumbles. No baking powder or soda... 😁
Hi there, no if you decrease the sugar you will want to decrease the flour. The recipe ingredient ratios must stay the same. So if you wish to make a smaller recipe, 1/2 the full recipe ( the means all ingredients would be reduced by 50% ) to keep the recipe as I made it. I hope this helps.

Could you explain the difference in texture in both? I love baking cakes but haven't tried cookies so far and I definitely want to start my cookie journey with your shortbread cookie recipe.
Hello, I have many butter cookie recipes here on my RUclips channels ( butter cookies are shortbread cookies ) Cornstarch in the recipe lowers the gluten in the cookie, making them have more of a *snap* You will also see rice flour used in this type of cookie, and this is because rice is gluten-free. You will find many different recipes, so try different ones out. I have many here on this channel so I encourage you to take a look at the ratios I used in some of those, then try one that you consider middle of the road, and see how it goes. Just to finish off, the use of a gluten free flour like ingredient is used *in place of * flour, not in the addition of flour. So the total amount needed includes the cornstarch. If you used that amount and switched it out just for flour, your cookies would be far different. We are basically tricking the recipe or the "cookie" by using that cornstarch, giving it a much lower protein content that you could ever do by buying even a lower protein percentage flour. I hope this helps you out a little bit :-)
Thanks a ton chef. I think I want to try out your traditional shortbread and also one with only all purpose flour. Will the ones that have only flour be more chewy? Not a fan of chewy cookies.
Hi again Divya Vivi, yes, any cookie that contains 100% flour will be more chewy, this is because there is more protein, which produces more gluten. This is a very general statement, as there are many cookies that only use flour and are not chewy, it depends on the recipe, and of course how long you bake the cookies. The longer a cookie is baked, more moisture is removed from the cookie turning them from moist into a crisp type of cookie.
Hi Marcelle ! all purpose flour is called "plain flour" in the U.K. ( this means it contains NO chemical agent to help it rise ... i.e. baking powder ) For example in the U.K. self-raising flour is very popular, this type of flour contains baking powder, so there is no need to add any baking powder to your recipe. In North America, self-raising flour is much more expensive, and much harder to find, so most if not all people use all purpose flour ( also known as plain flour ) and add baking powder to the recipe. So to answer your question, I'm using plain flour in my recipe here. I hope this helps, and thank you for watching Marcelle :-)

It is really an easy and amazing recipe. Was a big hit at ours, next time my daughter wants me to sprinkle some rainbow sprinkles or hundred and thousands as they are called here. I did add a tsp of vanilla extract. Do you think they will taste nice with a bit of lemon zest?

The authentic name for these cookies "shortbread" cookies, there is NEVER any chemical leavening agent added ( baking soda or baking powder ) They are a cookie that melts in your mouth, and crumbles. No baking powder or soda... 😁

Hi there, no if you decrease the sugar you will want to decrease the flour. The recipe ingredient ratios must stay the same. So if you wish to make a smaller recipe, 1/2 the full recipe ( the means all ingredients would be reduced by 50% ) to keep the recipe as I made it. I hope this helps.

What is the alternative to cornstarch in Scotland x
Hi Chef, I notice that you've used more cornstarch here compared your other traditional shortbread cookie recipe where you used only half cup cornstarch. Could you explain the difference in texture in both? I love baking cakes but haven't tried cookies so far and I definitely want to start my cookie journey with your shortbread cookie recipe.
Hello, I have many butter cookie recipes here on my RUclips channels ( butter cookies are shortbread cookies ) Cornstarch in the recipe lowers the gluten in the cookie, making them have more of a *snap* You will also see rice flour used in this type of cookie, and this is because rice is gluten-free. You will find many different recipes, so try different ones out. I have many here on this channel so I encourage you to take a look at the ratios I used in some of those, then try one that you consider middle of the road, and see how it goes. Just to finish off, the use of a gluten free flour like ingredient is used *in place of * flour, not in the addition of flour. So the total amount needed includes the cornstarch. If you used that amount and switched it out just for flour, your cookies would be far different. We are basically tricking the recipe or the "cookie" by using that cornstarch, giving it a much lower protein content that you could ever do by buying even a lower protein percentage flour. I hope this helps you out a little bit :-)

Hi again Divya Vivi, yes, any cookie that contains 100% flour will be more chewy, this is because there is more protein, which produces more gluten. This is a very general statement, as there are many cookies that only use flour and are not chewy, it depends on the recipe, and of course how long you bake the cookies. The longer a cookie is baked, more moisture is removed from the cookie turning them from moist into a crisp type of cookie.

Hi Dada, no, you do *not* need to use baking baker. Any non stick baking pan is fine to use.

Hi Marcelle ! all purpose flour is called "plain flour" in the U.K. ( this means it contains NO chemical agent to help it rise ... i.e. baking powder ) For example in the U.K. self-raising flour is very popular, this type of flour contains baking powder, so there is no need to add any baking powder to your recipe. In North America, self-raising flour is much more expensive, and much harder to find, so most if not all people use all purpose flour ( also known as plain flour ) and add baking powder to the recipe.
