    THAT moment...when you learn you do not need oil to sauté. You don’t need oil at all. I remember what an epiphany that was.... I haven’t had oil in my house for over 2 yrs.... my heart thanks you!

    Step 1: Heat up pan and add water, it will turn to "beads"
    Step 2: Add onions and wait
    Step 3: Stir around once it turns brown
    Step 4: Keep adding water if it looks like it's sticking

    Ok so I've been eating Vegetarian for a year now and have been gaining weight. I have been watching your videos for a while and not committing but once I went SOS, dairy free I lost 20 lbs in one week........... WOW............ thank you chef AJ, I realize the first week is probably to most I will lose in a week... but wow what an encouraging start. and the foods taste amazing, and I feel great!

      Tony Penne, 20 lbs in one week?!? Man, how much dairy, oil and sugar WERE you consuming? Lol. Good for you! I've been whole-food, plant-based for less than a year (I don't call myself a vegan) and I've lost 34 lbs and feel amazing. My cholesterol, triglycerides, blood sugar are all super improved and my energy level is wonderful. Amazing what a simple change in routine can accomplish. I'm never looking back. Congrats to you!!!

      While you can lose weight and get good lab numbers without going vegan, you cannot reverse damage to your endothelium, plaque and other damage to your vessels, type 2 diabetes and other meat and dairy causing disease.

    I had to pause at 2:12 mark... And I just want to thank you so much for bringing attention to birds and pans. I have 4 cockatiels and 3 budgies and it's so important to do research on caring for birds. 😍🥰🐦🦜... Also, I'm extremely new to plant based, and I'm learning new ways to cook. I can't wait to start cooking with no oil. Thank you.

    The Gerson Clinic starts their food with onion too. I completely agree. Also the onion gives the flavor instead of salt.
    I’m a fan of Salad Master cookware although I personally don’t own any. Plan to in the future.

    That does it, I need a NEW pan, that"s what it is, everything is just sticking to my pan,very frustrating, and, on top of that, don't know if the stuff that's in the pan is very good for you so I'm getting a new pan, great video Chef AJ!

    It all depends on the quality of your non-stick saute pan (skillet). I use bamboo or wooden paddle to move food around in pan. Guess its ok to use silicon paddles too. I live in U.K

    Do you have a comparable video on sautéing in a stainless steel pan. In my experience it works differently. Need help😢

    That's great and all but you're not realizing that most people dont use a nonstick pans anymore. This would not work on stainless steel or cash which most health-conscious people use. Those forever chemicals in your pad are much worse than a tablespoon or two of oil or good tallow

    Chef AJ. How does one cook oil free using a cast iron skillet? Is it just very low-oil cooking? I assume very little of the oil that is conditioning the skillet actually gets into the food. So, maybe a teaspoon at most. What is your opinion/thoughts?

      you can dry sautee, adding a bit of water or broth as you need it to avoid sticking/burning.

    After I got my new non-stick fry pan last week I've had pretty good luck with it. Thanks! You did mention that certain foods (e.g. broccoli, carrot and peas) are best in an air fryer. Which foods do you recommend or not recommend doing this way?

    It would be good for someone to come up with a proper name for this method of wilting veggies…its not sautéing. And there is a HUGE difference in taste between sautéing in even as little as a teaspoon of oil VS steaming with water because of what happens during a proper sauté.

    Hi I have question for you in plant based way of eat you don't recommend oils but what your views on homemade ghee ( butter) ?? Is it allowed ? In India it quiet common to use ghee.

      Chef AJ uses no animal products so ghee is not allowed.

      Not sure if zucchini can be carmelized, but you can definitely sauté it without oil

    I just purchased 3 brand new green Pan Sautee pans thinking I could be free of using oil or fats and it says the instructions you have to use a little oil... now I am so sad what can I do.

      But there is fast in everything!!! Even in greens and fruit. Oats are nearly 20% fat. Whole food fats like nuts, seeds and avocados can be part of a healthy diet but if you are overweight and wishing to lose weight, As Dr. McDougall has said for over 40 years "The Fat You Eat Is The Fat You Wear".

    I want to thank you for your videos and I really want to like them but the last two I've tried to watch the sound was so bad I couldn't hear much of what was being said. It's just defeating the purpose. I'd watch more if the sound was better and I guess I'm not alone in this so hopefully my feedvack is useful to you
