How To Make Cocoa Tea aka "Hot Chocolate"

  • For many of us, "Cocoa Tea" is something we saw our grandmothers make but never attempted ourselves. Chrisal reminisces on having this every Christmas with her family and is in the kitchen today to show you just how easy it is to make. She also includes her variation to this classic hot beverage that makes it the perfect thing to drink on a cold rainy day.
We call it "Cocoa Tea" but it's not to be confused with the packaged "hot chocolate with marshmallows" you get in the grocery store. This has a DEEP and rich chocolatey flavour together with a blend of spices that warms you up inside.
Cocoa has been a major contributor to Trinidad & Tobago's economy for over 200 years and the first variety of cacao was planted by the Spaniards somewhere in 1525 and was known then as Criollo.
This Caribbean Chocolate tea is apparent in almost every Caribbean island, each having their own spin to it. The spice blend used is entirely your choice but there are a few that MUST be included and that's cinnamon, nutmeg and bay leaf.
Try out this recipe and in case you're feeling a frisky, add a lil rum for some added warmth.

Wow! This bring back so much good memories of my childhood. I grow up with my grandmother and every morning we had cocoa tea. Comforting drink with the grease from the beans floating. We had to dry the beans, roast and ground it to get that oily looking cocoa ball. Really delicious drink. Thank you.

My Mummy used to make Chocolate and dumpling tea for us for dinner, she said that was a Bajan Special. It was milky and delicious. What she did was grate and boiled the chocolate stick, then put to boil with spices. Then strain it, put the liquid in another pot on the fire, let it rolling boil, add small pieces of dumpling to cook. Then add evaporated and condensed milk. Delicious!

Cracking that nutmeg with my teeth would have landed me at the dentist. Cracking that nutmeg with your teeth I'm impressed. On the flip side I live in the states & watched someone make this several times. Last weekend I made some this time around I used star Anise, cloves, fresh sundried lemongrass someone brought me from the islands along with some bay leaves, cloves and also some vanilla extract. It was so delicious my toes curled up in my shoes. For me I put all the spices in a pot of water & let that come to a rolling boil smelling my home like Masala Chai Tea then add the cocoa. Let that come to a rolling boil without boiling over & add my evaporated milk last. Here in the states I can find that particular coconut milk but it's located in certain stores, but very expensive for me. Watching this video makes me want to go make more without the lemongrass because I ran out of it. The only downside to making this for me is that using what I call The Knuckle Buster Grater. Overall I still love it. Now I will barely use (but will use it from time to time) that hot chocolate mix in the stores. Thanks for the memories.

Never used salt, so this is a must try. Usually add some custard or flour for thickness. Also dry orange/lime peel. Cristal and Badawi...next recipe should be black rum cake. Try bringing Rene for one of her special recipes.
