How to Make St Lucian Cocoa Tea

    Recipe:
    St Lucian Cocoa Tea
    Ingredients
    ¼ cup Cocoa Stick, grated on box grater
    1 each Bay Leaf
    1 each Cinnamon Stick, broken in half
    2 each Star Anise
    3 each Whole Cloves
    2 cups Water
    1 can (375g) Evaporated Milk
    ¼ cup Condensed Milk
    Method
    1. Grater cocoa stick on box grater and set aside.
    2. Combine water with bay leaf, cinnamon stick, star anise and whole cloves and bring to a boil and simmer for five (5) minutes to infused the flavor of the spices.
    3. Add cocoa powder and whisk to incorporate and simmer for five (5) minutes.
    4. Add the evaporated milk and bring to a boil and simmer for five (5) minutes.
    4. Add the condensed milk to sweeten to desired taste.
    5. Strain into a mug and serve immediately.

    My neighbor is from St Lucia and she just brought me back 2 bars of cocoa, so based on your instructions I am going to try making St Lucia cocoa tea. Will let you know how I made out. I am from StVincent

    It's perfect, but I don't grate just cut the piece I need and let the boiling process break in down.thxs for sharing

    Is there a suitable replacement for the cocoa stick? Can I use unsweetened dark chocolate powder?

      I use 100% cacao unsweetened chocolate bar and it’s almost the same

    2:38 That's why I'm here. I want everyone to know that we don't need to grate the cocoa stick anymore. Why? It dissolves in boiling water 🤦🏾‍♂️😆

    As a child of St Lucians I was raised on Cocoa Tea. I now make it for my family and my children love it. We have never ever used custard powder in it, though there are many variations traditionally it is always thickened to your liking with flour and water. Custard powder is made from cornstarch and eggs. I can guarantee you that the locals merchants in Castries, Gros Islet, etc do not use custard in their cocoa tea because it is an expensive additive. Thicken with cornstarch if you will, but please DO NOT say St Lucian's make Cocoa Tea with custard. That's blasphemy! And by the way, we use essence in our Cocoa Tea, like banana and vanilla. Our traditions are our heritage they are all we have, please be respectful of them.
