Also, remember there was a cook, scullery maid, cooks aid et al. You can’t think of a modern day domestic situation. The Governor General was an influential and important dignitary. Lady Lamington didn’t clean, cook or wash.
An Aussie favourite. You can use a basic butter or vanilla cake mix for the cake, just bake it in a square tin or tray. Cut into pieces and dip in chocolate mix and roll in dessicated coconut.

As an Aussie, I like this interpretation. You seem to have made the sponge super light (it was originally made with day old sponge left over). I also grew up with the option of a sweet whipped cream filling, but I think the Ganache option you created is a lovely variant. congratulations. I feel inspired to try this recipe!
you can make a similar version by using bought vanilla cake and just make the chocolate coating and dredge in coconut, not quite as nice as the sponge version but close to it. On can use a block of cake, coat it in choc and coconut and slice it in half after then put a nice jam and fresh whipped cream between the two halves - delish
That is an incredible recipe. I will probably never try anything that sweet, but maybe speed up the video, I would be likely to share it with my friends. Very nice. I learned a lot about making frosting.
I wrote out the instructions incase anyone needs: Lamingtons - Kathryn Kwa Ingredients for sponge cake 6 large eggs - grade A 50g caster sugar 130g caster sugar 180g plain flour) 60g melted butter 60ml milk 1/2 tsp vanilla essence Chocolate ganache: 200g dark chocolate 100g dairy whipping cream 20g butter Chocolate glaze : 90g icing sugar 60g cocoa powder 60g melted butter 150ml boiling water 1. Melt butter 2. Add caster sugar to eggs and mix with whisk 3. warm mixture in a glass bowl over water until it reaches 40c 4. Add 130g sugar and mix with hand mixer. Beat well until light colored and fluffy 5. turn on to low and beat 1 more minute 6. Remove beaters and sift in 180g AP flour a little at a time, folding very gently with a spatula 7. Add melted butter to dish and add 60ml milk and vanilla extract. 8. take a little of the batter and mix into wet mixture then bring that back and fold into eggs. Mix well but don’t deflate. 9. Pour into 9” square pan 10. Tap out air bubbles a few times then bake at 170c for 45 minutes 11. Make ganache by adding chocolate to a bowl and pouring hot cream over it.(or use double boiler over water and use cold cream) 12. Add butter after ganache is smooth. Set aside 13. Glaze: add boiling water to powdered sugar/cocoa powder and mix very well. Add melted butter and mix. 14. Assembly: let cake cool, slice horizontally into two layers. Spread ganache, re-layer and chill in refrigerator 20-30 minutes. 15. cut off edges and then cut into squares 16. Dip into glaze by stabbing cake with a fork well, dipping and turning and use a spoon if you need to drizzle glaze on the bottom. Let drip a moment then add the cake to a shallow bowl of dessicated coconut and coat well. Store in a container. Done!
Such a nice recipe,these remind me of Čupavci (Chupavci) in my country. This is my second time hearing for Lamingtons. I saw it on my fav kids show on YT "Hiho kids" They served it with tea too. These silent videos are my favourite because it's more useful and it's relaxing too. These remind me of asmr.
P.S. the cake isn’t sliced in two (horizontally) and chocolate put in the middle - it’s just a block of sponge cake cut into cubes. What is extra nice is to split the completed Lamington in half, open as two halves and spread strawberry jam (not that American jelly) and dollop double cream on each half - decadent!! 😋
I appreciate this very gentle demonstration. It's a basic sponge. you can warm your eggs at room temp or place in warm water and whip in processor or with hand mixer for volume (skipping a step). And this is not sweet.

We make these in Hungary, also. But we add Rum into the Chocolate Ganache and also into the chocolate buttercream center.

Thanks for the recipe. However, the eggs that you used is not fresh, that is why the yolks tend to break. Fresh yolks do have fullness in volume.
