Viv Y - If you have a freezer, you can use the simplest models of icecream maker, even if those with a compressor are the best, the simple ones are small/light. If you get one at a thrift store, you could just give it back to them when you’re leaving for home again... ☺️😷🙌❣️

I imagine vanilla bean pod would be tough texture in the icecream. I usually slice it open and scrape beans out of pod. If you don't want to waste any beans, wash the pod in coconut milk to get rest of the beans then discard the pod. I will definitely try this recipe. Thank you.

I'll give you some ideas. freeze the mixture first without using an ice cream maker, then use food processor to make the mixture smooth and freeze it again. repeat this a few times, you get a better result. or, take the mixture out of a fridge before it completely freezes, stir well with a fork, spatula or whatever, then put it back to the fridge. after 1 - 2 hours, do it again.
Fun to watch, always. One question: I've always heard that you should never eat tofu without cooking it. They say its a "raw" product out of the container, and not good for you or safe to eat without cooking/heating.
Eidann63 :: You are mistaken. Tofu can be eaten right out of the package as is. Tofu is ALWAYS made from COOKED soy beans, they are soaked, then cooked, then ground into soy milk. The soy milk is filtered removing the okara solids. A coagulant is added, tofu is made. I believe you meant to say “don’t eat raw uncooked soy beans”, which is true. Even edamame, the green soy beans popular with beer these days in America should always be steamed or boiled first. That is what we do in Japan.

例えばこのレシピなんかだと、粉砕する必要があるのはカシューナッツだけなので、カシューナッツだけでしたらフープロや安価なミキサーでも粉砕可能ですし、カシューナッツをピーナッツバターなどのナッツバターとかアボカドオイルやクセの少ない菜種油で代用すれば、材料が混ざりさえすれば良いので機械も必要なくなります。アイスクリーマーもあった方が断然良いですがなくても出来ないことはありませんね(^_^)

second idea would be... adding more fat(ex. oil or cashew nuts). coconut oil makes an ice cream softer but it has strong flavor though.
