really? even with guanciale you couldn't get it right? This is not that hard of a dish, like if you were complaining about cacio e pepe, i might understand, but this.. its easy, the only thing nobs get wrong are the ingredients usually.
@@Andinus3000. Exactly ! What often doesn't turn out well is the "Cacio e Pepe", even with the right ingredients, but not the Carbonara. With the Carbonara the only thing to be careful about is not to make “scrambled eggs”.

The issue was this recipe (and people who are new to making this is warned) when you're making the sauce...cheese, raw eggs..hot oil, hot pasta, pasta water... There's a chance if not done correctly the egg can cook out of the sauce. My problem was I looked at multiple people making it and just used some random persons steps and I tempered my water to cool and my cheese was a smidge gritty. So, not completely melted. BUT I still made it. My comment "I would give anything to have this dish authentically made" is simply because Id love to have an authentic Italian. So yeah, no "knobs" around here. 😉

Dish prepared with only parmigiano reggiano, butter and a little pasta cooking water. The Americans left only the name, but they practically made another dish from this Italian dish. We cannot even speak of "version" because they have completely changed the dish, adding cream, onion, garlic, chicken, etc. If chef Alfredo had been still alive, I guess he would just shake his head and say ... please take my name out of that dish because that's not my dish !

I saw your pasta sauce at the store today and was so excited until I saw the price. Surrounded by others that were half price I had to go with the next choice. I'm still excited to see what else makes it to our store and will try to budget for it I really want to try it❤

I never had a real carbonara in Australia and grew up eating my mother's version with heavy cream, garlic, and other atrocities. I started making real carbonara after seeing your first recipe video and I will never turn back. I am now a total snob when I'm at a restaurant and their carbonara uses heavy cream 😁
