Talking about lasagna again, I have my own specialty, I use red sauce, white, a layer of sauted spinach in butter, parmigiana reggiano. If I want good mozzarella I will. I make other different kinds of which peas is used. Therefore; there are many different kinds. Take the white lasagna I also make , mushrooms, sauteed in butter, olive oil, erbs, basciamella sauce made with milk or cream or both, nutmeg, white pepper, salt and a good hand of parmigiana. And it's layered with mushrooms, cheesees and white sauce. As you see there are many many lasagnas made in the peninsula. Grazie.

For us Italians, of course, this is nothing new, because in many houses, in many families they put hard-boiled eggs in lasagna. Then in different parts of Italy everyone does it a little bit in their own way (there is not ONLY one kind of lasagna). Hard-boiled eggs, for example, are also put in baked pasta (Pasta al forno). They enrich the dish, making it even more delicious. PS: If someone then doesn't like hard-boiled eggs, they don't put them there.
My suocero used to make it with alternating layers of mortadella and tiny meatballs. He also used those white processed cheese singles. It was spectacular. This is typical Pugliese I think.

@@marydc7625 Hi! I simply followed my intuition for the ragù sauce. I was more generous with the meat than I would have been for a sauce to be used with macarroni or spaghetti. For the bechamel I used the following rule: - 50g butter - 50g flour - 500ml milk And I multiply it in case I think I will need more. I hope this helps 😊

I've made several now and omg!!! Fallow her instructions as much as possible, only improvise minimally. You won't be disappointed. You're friends and family will not!! Especially with your own homemade pasta!!!

There goes so much love in it, you can taste it. My husband can always tell if it was something from a book or from Nona. The recipes from cookbooks are okay but they become great when you add your own flavour to it. That being said: your recipes are the only ones where I change nothing because you already added the love and nona-superpowers ❤❤

And honestly... I promise it takes the same time cooking one batch and 3 or 4. Just prepare a bunch, freeze it, and you will have genuine frozen lasagna for when you are not in the mood for cooking.

This is almost exactly how I make my lasagna except I don’t t use boiled eggs and I add chopped spinach to the layers. I going to try it your way with the eggs for my next lasagna. What do you think of adding a beaten egg to the layers rather than hard boiled?
