I sometimes don’t worry about it & just pop the panko straight onto the fillet. It works this way but the crumb isn’t quite as thick and covered completely once cooked, otherwise I’ll just dip in some milk or whisk an egg and use that, results in a bit better coverage but it all works well i reckon!
