Next time try to sprinkle the shredded green onion onto the fish, you may keep some for garnishing later. Try to add in the ginger into the hot oil, just before you turn off the fire. Pour it over the green onion, this step is very very important, I learn it from the restaurant chef.
took 2 fish filets out freeze, will follow this recipe for dinner tonight。【update: fish is a huge success. hubby loves the fish cooked this way. I don’t have enough ginger to hold up the fish so I used the Japanese tube tofu instead. thank you for the detail instructions】

Vegetable oil is plant based. Example are: Canola oil, soybean oil, corn oil, coconut oil, etc. You can use any of these in your recipe. I used canola oil.

I dont hv rice wine. Can i use rice vinegar?
You can skip the rice wine but DON'T use vinegar, it will change the entire taste profile of this dish. I hope this helps.

You can definitely cook the fish the way you like it. Be careful about certain species of fish which are not safe to eat if not thoroughly cooked.
