How to make Smothered Turkey necks with brown gravy, green peas and potato salad

  • New Orleans native Charlie Andrews Demonstrates on how to make Smothered Turkey necks with brown gravy, green peas and potato salad. This meal can serve up to 4 people and it is really good! We start by cleaning, cutting, seasoning and searing the turkey necks. Then we add that into a slow cooker with water along with onion, celery, bell pepper and garlic with has been sauteed. We let that slow cook for 4 to 5 hours or until the turkey necks are tender. To make the gravy we make a roux. Why? Because the turkey necks are literally fat free! Then we start on the green peas. We add green peas, Onion, butter and sugar into a medium sized pot, and we let that simmer for a few minutes. Then we start on the potato salad. We peel and boil the potatoes. Then we mash the potatoes and grate the eggs. We add Onion, celery, relish mayonnaise, mustard and a hint of creole seasoning. To finish we make the gravy, and we cook the turkey necks in the gravy for a few minutes. We serve the turkey necks and gravy over rice. Then we add green peas and potato salad.     I've never even thought about turkey necks but you make things look easy and good so, I gotta try this. Wonder'n if the roux will change the taste of the necks? Never had 'mashed' potato salad but, again, try'n something different is always good! I ran out of my short grain rice so I HAD to cook a bag of jasmine---it was on point!! Everything I've tried of yours turned out excellent--- and I'm sure this will also 👍. Thankx for sharing. The few who don't like smthg probably have BURNT tastebuds 😹😹

Your recipes are the bomb - they don't turn out exactly the same for me cuz I'm not really a cook but with you and you tube I try best I can. Didn't have the necks so I followed your recipe but used pork bonez😋 in the slow cooker; woke up to amazing smells from the kitchen! Just NOW finished making your tater salad wuz 'smashing' 😹.     Shalom Charlie, My family is from Louisiana, and about 3/4 of us now live in California. My cousin Pat was supposed to tell me how to cook my Chicken Necks, well I called her and she is not at home. So...what did I do, I looked you up on line and did not see smothered chicken necks so I followed your turkey recipe instead and tweaked it a little.     I can't find turkey necks at my local grocery...I have used the meatier parts of turkey wings in this type of recipe...and they rock! I've been making Smashed Potato Salad for years, so love your recipe...

    Sir Gravy Master! Thank you for showing me how to make brown gravy without gravy master in the bottle! Don't get me wrong, everyone love my gravy, but I never actually pulled it off without that brown liquid in a bottle. A great great great tutorial!     Not for nothing…that looks like he done watched grandma make it time and time again. I can taste that ish through the screen and I’ve never seen some of the techniques he used but I somehow know why this is a down home meal!! Great work. And that roux was out of this world, that’s how I know that gravy was everything.

    Thanks Charlie! I grew up eating turkey necks, rice and gravy with green peas. I'm from Baton Rouge. My mother will cook them, but used brown gravy packs. All the cut up seasoning was the same. Now I will try my hands at your recipe 😁

    I am making this meal today. w/out the peas and potato salad. I will have yams instead. the turkey necks are in the crockpot now. I will let you know how it turns out.
