    Everyone says it's dosa . It isn't its similar cheela, you make this with maida and/or besan Slurry. But the use of maida and egg does make it a pancake. A savoury pancake it is.

    Indian food is some of my favorite food, I've tried spreading a word about different country foods like Indian food, and my parents call it garbage. My parents don't eat anything except your ordinary low quality home cooked meal of Chinese food. I just can't believe how some people could miss out on the infinite joy of food across the world. Especially Indian food, when the proof of its deliciousness is shared by the knowledge of one the best cooks in the world. . . :(

      I think the problem with any new cuisine is that it's difficult to master despite being fairly easy to learn. For any new cuisine, you could make the basic dishes pretty well, and even the harder dishes acceptably, but it's conceivable that after some time, you'll get bored with your own recipe, likely due to some inconsistency or imperfection. And it takes time and effort to really improve, which not everybody has. However I agree with you that people should at least give it a try. And that's not even going into the obvious option of restaurant food which has its own advantages and disadvantages.

      @@ReadmyBioo Well the man does make magic in that kitchen :) Even if he cooked air.. and I've eaten his amuse-bouche ..which was..this unreal foam of air and blasted with taste on the tongue ..I'd love to just stare at the huge amazing amount BUT then again he doesnt eat garbage and cooks from the basics ..Whats better than that? lol ...I think that he does that set up. His bowls are well loved (chips and all) hes got a great little presentation board which looks very loved. I just giggle at the fact that everything is pre-measured and in a mason jar.

    I visited Kathmandu several months before the pandemic. I would love to see Gordon cook some Momos with the dipping sauce and also make Choila..Indian food is awesome but Nepali food is too!!!

      @@prasadchaturdesale5795 choila is nepali dish. It originally means spicy grilled buffalo meat. But now you can get chicken choila, mutton choila also. Origin of momo is tibet which nepali merchants spread to nepal and then parts of india.

    Hi. I loved your recipes. I’m from Sri Lanka. Your recipes are different from the traditional. Will try it.
    We call the spicy pancakes, Masala Thosai.
    We don’t use egg and use less cumin seeds.
    Try powdering the cardamom in a pepper mill. Then you don’t get to bite the seeds!!!!

    I don't know why but I want to name this recipe: Aloo ka parantha want to follow his dreams and be a Dosa but his parents forced him to study in abroad and ended up being a Savoury Pancake.........now the reason I call it a parantha cuz it's a bit thick for a Dosa😂

      Mascarpone cheese (very mild, close to cream cheese) is usually used only in desserts, plus the addition of egg yolks is basically adding a custard like texture to the pudding, both are a plus in my book. He just elevated a basic boring rice pudding to a fancy dessert.

    The pancake recipe is interesting...There are extremely tasty culinary delights with plain pancakes filled with sweet coconut fillings inside plain pancakes called ,'Pithe' which is basically grated coconut cooked in jaggery until a sticky concoction deep brown in colour which is then placed in the middle of the pancake and then rolled...

    Hi Gordon... you are right sir, these are Indian “inspired”.
    We don’t put milk to make these kind of pancakes, we don’t remove the seeds to make it less spicy, we don’t use olive oil ( too costly)...we use sunflower oil all over India or in northern states of India we use mustard oil..
    I am not an expert but my mom would add some diced tomatoes and fry it with the onion in the potato filling.
    Garam Masala is a dry toasted mix of spice. We don’t put it in the start. We put it towards the end of a cook.

    For masala dosa we need to soak rice for 8hr along with other ingredients and have to do fine paste then keep it for fermentation upto 8hr .the batter has to get double .then we can make dosa r pancake .

    I like how he has written Indian “inspired” dishes. I love fusion food. Indian with western cuisine. But the key thing is to deliver what is being advertised. There are many North American restaurants which serve fusion food in the name of Indian food which is misleading to many people who are not familiar to the culture.
