Those little dumpling squash with honey and spices (I use pumpkin pie spice) are delicious as dessert with a little scoop of vanilla ice cream in the cavity. Tastes similar to pumpkin pie.
These all look really good. I can't wait to try them out. I never thought of Eggplant as a squash. It never occurred to me. I have 3 in my garden almost ready. I am going to try this out. I love squash anyway you cook it. So good for you too. I make acorn squash with butter, brown sugar, vanilla and maple syrup.
