It's supposed to be cooking in boiling water. I wasn't a huge fan of how they worded it in the recipe either...I mention that in the outtakes at the end. They talk about it steaming the tempeh, but yes, it's lightly simmering.

Speaking of love/hate: That's tempeh and me, so I am looking forward to trying this recipe, because it looks like guaranteed tastiness. And I love my greens--LOVE them--so this is a smart pairing. Bitter greens, like mustard, broccolini, and escarole, benefit from a 5-minute boil in salted water before sauteeing, but I don't mind the bitterness so usually omit this step. TFP, and have a Happy Halloween!
LOL, The Veganomicon and I have had a long and happy run...but it's time to end it. If you like spicy things, then I have a hard time believing you wouldn't enjoy this tempeh, even with your love/hate relationship. It's so yummy. And yeah, I'm with you, the bitterness in the greens was great in my opinion. Happy Halloween to you too!! 🎃
