I made this last night and it was delicious! My first recipe of hers that I have tried. I was pleasantly surprised how moist the chicken was. I appreciated her tips and ideas of making the chicken ahead of time. I like prepping when things are quieter so I can get dinner made faster when I’m rushed for time in the evenings. I also took her idea of using less chicken and more veggies and thought it was great. Even with 3 chicken breasts it still felt like plenty of chicken. I thinly sliced the chicken then mixed it in to keep it from drying out. I made her Cajun seasoning and thought it was great. I added 2 tsp of the seasoning to the veggies since my kids are picky about that and added extra to the adult plates which worked out great. It was my first time making Cajun and it was fun to try! a "Chicken Lazone" over pasta dish like this is one of my favorites, too much veg for my liking though. Chicken Lazone should be up there with the Chicken piccatas and chicken parmesans of the world if you ask me.
You can replace the heavy cream with 2 cups of low sodium chicken stock, 1/2 cup of white wine, and 1 cup whole milk. Plus it's makes more sauce:) That's how my family prefers their Creamy Cajun Chicken Pasta. It has great flavor! Or you always just use half and half in place of the heavy cream.

I have a variation of this recipe that I love. Cut the chicken breasts in half and pound thin, season, cook and slice into strips. Replace the red onion with green onion you cut small at the stem and larger at the top. Add the stems of the green onions when you sauté the vegetables, but leave the top part for garnish. Other than that I do everything the same, it’s a tremendous recipe, thanks!

Used veggies we had so broccoli, red onion, little red pepper and frozen peas... will definitely make this again! Can you buy ‘heavy cream’ ? Checked several g stores after reading your response ... our stores only sell ‘heavy whipping cream’! Your lasagna is also a super hit at my house!!!
