My only suggestion, using the enameled cast iron Dutch oven, use silicone or wood utensils vs metal. We have ours from Lodge and they make that suggestion to prevent damaging
As long as you're gentle, metal is probably fine. Enamel is pretty forgiving (unlike non-stick pans). They pretty much have to include the warning to avoid frivolous returns and warranty claims. Jabbing the pan (like to break up meat) with a metal utensil or using a carving fork to remove a large piece of beef which can pierce through the meat and chip the coating is when damage is more likely to occur.
I made this today without several of the ingredients (because of my allergies and I forgot). Instead of heavy cream, I used flour. And I had leftover green bell peppers so I used it along with the red. I did not have tomatoes so I used a bit of tomato paste when sauteing the veggies. This still came out heavenly! I used Slap Ya Mama cajun seasoning and it had just the right amount of pepper and flavor. Thanks Laura! 💥🙏
I remember making your old Cajun chicken pasta when the video was first released! We had never used Cajun seasoning before, wasn't really a thing here in Malta so we naturally didn't know how spicy it was! Ended up having to wash off the pasta sauce cause no one could eat their dinner! Much more careful with the seasoning now :) This updated version looks delish!

What is a good alternative for andouille sausage or smoky sausage when you cant get them? Would chorizo be okay as that is more readily available where I am
Yum! I hate to be this crazy person but what sort of protein would you use if you couldn’t have chicken? I was thinking a yummy beef andouille sausage but I’m not sure of an alternative protein for the chicken

I make your old Cajun chicken pasta weekly but change it up with rice and even chicken meetballs, so good!!! 💯

I find kielbasa is a good substitute in a pinch. Chorizo could work in theory though. Might be a little overwhelming flavor wise

Jumbo shrimp, salmon fillets. Add them in the sauce-noodle mix last few minutes.

She’s taking the tendon out of the tender. It’s sinewy and rubbery and chewy. Using a fork is the way I’ve done it for years.
