Hi Toni - that applesauce looks real good - love it. We have friends who have crab apple trees which we pick - I make apple jelly from them, then use the pulp to make apple butter which is very much like apple sauce but with a little cinnamon and nutmeg added - goes great with a pork dinner or can be used on toast as a jam. Now I’m hungry lol
I take peelings and cores out to compost bin. Usually the raccoons will visit and eat the scraps. I have a trail camera. I have 17 pints of applesauce in pantry. Homemade is so much better than store bought. Keep stocking up

I have a question. When I waterbath can, like you I cover the jars with water. I have seen a few videos of people that water bath, but they don't cover the jars. Do you by chance know if it is because they use a different type of lid? (They show winding/turning the lids on.)

never heard of that....I try to follow safe and tested methods, and always cover the jars completely when water bath canning
Would a weight help keep everything underwater so it doesn’t go bad
Yes, I added the smallest jar 4oz as a weight on top of the apples!
Can’t you use a coffee filter on top of the jar for apple cider vinegar?
