There are all this videos that tout "3+ ways to......." I don't need advice on how to chop slice dice n bag I need to know the best way to Preserve!     I once had way too many to even freeze them all. I decided to pickle them just like cucumbers, but added some sliced garlic to the jar. Absolutely amazing, tastes nothing like pickles. Very nice

    Thank you for this information. We love zucchini, cook it all kinds of ways fried, chopped and added to spaghetti and lasagna sauce, shredded with eggs for breakfast quiche. I munch it raw even. Problem is you have an abundance of it in the summer when it's the best but I didn't know how to keep it for later. Canning it softens it. I will definitely try this method. I agree with freezing twice. That sounds right. Thank you!

    Great video Eric will have to try this and buy myself a vacuum sealer. I didn't grow zucchini this year but grew spaghetti squash which has grown like crazy and taken over my garden.

      I can not find any information about vacuum sealing fresh uncooked vegitables and freeze I think? Or not. We love raw zucchini squash etc. Any advice? I want it to be as tasty and crunchy ! Thank you

    Nice.. I am at that point in the season where I just can not eat that many zucchini, however 2 months from now, will have zero.. this looks like a good solution.

    Question: I have a small freezer which is already full with meat, etc. Do I have to freeze as in the first step? I don't have space for a cookie sheet. Can I let the zuke slices dry and then seal the bag?

      Hello. It should last several years. Without air in the bag it will not get freezer burn and will last a lot longer.

    Will the zucchini be spongy? Will I be able to saute it on stovetop with seasoning and it still taste good and done? I just don't want it to be mushy or spongy. Please help.

      Zucchini is normally normally somewhat spongy when fresh. I don't really know how to help.

      It honestly depends on your freezer and the temp you have it set at. Could be 3 to 8 hours.

    People are not blanching when vacuum sealing so i have no idea why hes going through this blanching step

      I mentioned it was to slow the enzymatic breakdown of the vegetable even when it is in the freezer.

      Agreed but the process of blanching is only if your going to keep them longer then maybe 6 months and then it might change the flavor a tiny but but just so people know it not a safety thing its just a flavor thing if you are going to keep them past 6 months.
